Healthy Chicken Fiesta Soup

Serves 6

1 lb 95% lean Gold'n Plump ground chicken, browned
1 (14.5 oz) can Great Northern beans, rinsed and drained (I made mine from scratch)
1 (16 oz) can chicken broth
2 garlic cloves, minced
1 tsp oregano
1/2 tsp salt
1/4 tsp ground red pepper
1 Tbsp lime juice
1 bay leaf
1 (4 oz) can diced green chilies
1 (14.5 oz) can diced tomatoes
2 cups frozen corn

Add chicken, beans, broth, garlic, salt, lime juice, bay leaf, chilies, and tomatoes to slow cooker.  Cover and cook on LOW for 5-6 hours.  Add in oregano, ground red pepper and corn and stir.  Cover and cook for another half hour.  Ladle into bowls and serve with cilantro and cheese, if desired.

Review:
If you're looking for healthy recipes this winter.  This is a good one.  The ground chicken is so lean and the lime juice and red pepper adds a punch to this recipe.  I put a dollop of sour cream in mine and it was delish.  4 stars.

    Is this a sponsored post? I don't think I've ever seen a recipe for chicken soup that specified (and linked to the company website for) a brand of chicken before.

  2. With chicken you can never go wrong if you cook it slowly and making it into a soup. Always a fan of chicken!
