Day 177: White Chili

When you first asked me to do this, you mentioned that I could do it for our 2 person family. What you failed to account for was Ryan. He will eat all night long and we rarely have leftovers even if we cook a meal that was meant for 6.

Serves 6

2 (14 oz) cans chicken broth
3-4 chicken breast, trimmed of fat
3 cloves garlic
2 teaspoon ground cumin
2 tsp dried oregano leaves
1 tsp salt
1 tsp crushed red pepper
2 cans great northern beans
1 can white shoepeg corn
3 TBS lime juice
2 TBS chopped fresh cilantro

Add chicken, broth, cumin, oregano, garlic, salt, and red pepper to slow cooker. Cover and let cook for about 6-8 hours on low or until chicken falls apart. Shred the chicken with two forks. Drain and rinse the beans and corn and add them to the slow cooker. Add chopped cilantro and lime juice to slow cooker. Put cover back on and let cook for 30 more minutes until heated through.

We put a little more red pepper flakes in (about 2 tsp) and also a dash of cayenne pepper to make it a bit spicier. We also wanted more corn so we put 2 cans in. It was a great meal. We would give it 4 stars.

  2. shoepeg corn is white corn. I found it in the next to the yellow canned corn. That would be awesome if I could do a print link. I'll have to look into it! Thanks for the idea.

  3. So I tried this with very high hopes.

    My husband's comment was, "too much chicken" LOL

    We LOVE all things spicy, but I'm wondering if I used the wrong stuff in this. I used 1 tsp ground red pepper, and HOLY hotness. Are crushed red pepper flakes different? I think I messed it up. My baby wouldn't go near it.

  4. Yes, red pepper is different than crushed red pepper flakes! I'm sure that's why it was so hot.
    I have a question about shredding meat. I always just throw frozen chicken breasts in the crock pot and then put them on high because I need them done faster. I can never shred my chicken as much as it is in the picture. Is it because I'm not cooking them on low? Or maybe I just don't take the time to shred enough. I'm not sure.
    I made this soup and would give it a 3 1/2 stars. We added sour cream and chips and that made it even better.

    Shoepeg Corn is NOT just a "White Corn"....WHITE CORN" is White Corn!

    Shoepeg Corn is a totally different variety...named for it's different shape
