Description

Come n’ get it!! A meal for your hungry cowboy. Ground beef, beans, bacon, cheese, corn and rice made fast in your Instant Pot. 


Ingredients

Scale
  • 3 thick slices of bacon
  • 1 cup diced onion
  • 1 pound lean ground beef (I used 93/7)
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 1/2 cups chicken or beef broth
  • 1 cup uncooked converted rice (or long grain white rice)
  • 1 (28 ounce) can baked beans
  • 1/2 cup frozen sweet white corn
  • 1 (8 oz) can tomato sauce
  • Salt and pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. Cut the bacon into half inch pieces. When display says HOT add the bacon into the pot. Cook until crispy. Use a slotted spoon to move it to a paper towel lined plate. 
  2. Discard all but one tablespoon of the bacon grease. Add the onion into the pot with 1 Tbsp of bacon grease. Saute for 2 minutes. 
  3. Add in the beef and break it up. Brown for about 5 minutes. Stir in the salt, pepper and garlic powder. 
  4. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off the pot.
  5. Sprinkle in the rice. Dump beans and corn and tomato sauce on top. Don’t stir.
  6. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  7. Stir. Salt and pepper to taste. Sprinkle the bacon and cheese on top and let the cheese melt. 
  8. Serve and enjoy!
