Visitors Coming Casserole

Drop in visitors at dinner time? No worries…just whip up this dinner and you’ll have a chicken pasta dinner that you can serve up to your friends. In less than 30 minutes you and your unexpected guests will be happily munching away. It’s got the flavors of chicken parm with chicken, marinara sauce, mozzarella, parmesan and a crispy breadcrumb topping. But WAY less work. That’s how I roll!

Ingredients/Substitution Ideas

  • Boneless skinless chicken thighs–or rotisserie chicken
  • Kosher salt
  • Black pepper
  • Italian seasoning
  • Garlic powder
  • Chicken broth–or water and Better than Bouillon
  • Egg noodles–or rotini, penne, macaroni or another short cut pasta
  • Favorite spaghetti sauce
  • Cream cheese–optional, but adds a fun, creamy element
  • Panko bread crumbs
  • Cooking spray–or melted butter
  • Mozzarella

Steps

Add chicken into bottom of Instant Pot. Season with the salt, pepper, Italian seasoning and garlic powder. Toss. 

Pour in the broth. Sprinkle the pasta over the top. Dump the spaghetti sauce and cream cheese on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting.

Stir. Sprinkle the mozzarella cheese and parmesan cheese on top and then the panko.

Lightly spray the panko with cooking spray. Place air fryer lid on top and bake at 350 degrees for 5 minutes, or until crumbs have browned up and cheese has melted. 

Serve and enjoy!

Notes/Tips

  • Serve with a green salad, a fruit salad or some roasted vegetables.
  • I used my Duo Crisp 6 quart Instant Pot*. I like this Instant Pot when I want to crisp up the top of what I am cooking. If you don’t have an air fryer lid you can do the last crisping step under your oven’s broiler. You can transfer the mixture into a baking dish or you can just pop your stainless steel instant pot liner into the oven.
  • If you use another type of pasta you may need to adjust the cooking time. Here is the formula: look at the back of the box of pasta and see how many minutes it says to boil the pasta. If it’s 10 minutes you divide that number by 2 (=5) and then subtract 2 minutes. So you would pressure cook for 3 minutes.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

A super fast and easy dump and go Instant Pot pasta with chicken, cheese and panko breadcrumb topping. 


Ingredients

Scale
  • 1 pound boneless skinless chicken thighs, cut into half inch cubes (or 2 cups rotisserie chicken)
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 1/2 tsp garlic powder
  • 2 cups chicken broth

  • 2 cups favorite spaghetti sauce
  • 2 ounces cream cheese (optional)
  • 1/3 cup panko bread crumbs
  • Cooking spray
  • 1 cup shredded mozzarella
  • 1/4 cup shredded parmesan cheese

    This is at least twice as good as it should be, considering the ratio of simple to delicious. It punches above it’s class, that’s for sure. I don’t have an air fryer for my IP, so I just stick the pot under my oven broiler for a few minutes. Thank you for the recipe!
