Stay Away Casserole

This is a casserole so good that you’ll want others to stay away because you’ll want it all to yourself 😉 This is a hearty meat and potatoes dinner. I think you’ll really like it! There is a bit of time involved upfront since you need to brown the beef stew meat in batches. But it’s not hard, just takes a few minutes. Enjoy!

Ingredients/Substitution Ideas

  • Canola oil
  • Beef stew meat–or a chuck roast/rump roast cut into cubes
  • Montreal steak seasoning–or your favorite steak seasoning
  • Onion
  • Beef broth–or Better than Bouillon and water
  • Russet potatoes–or red potatoes
  • Salt and pepper
  • Cream of mushroom soup–or cream of chicken
  • Garlic powder
  • Cheddar cheese–sharp or medium

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil. Season the stew meat with the steak seasoning. Work in batches to brown the stew meat for about 5 minutes on each side. 

Once all meat has been browned add in the onion and saute for 3 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 20 minutes. When time is up move valve to venting and remove the lid.

Evenly dump in the potatoes. Salt and pepper the potatoes to taste. Dump the cream of mushroom soup and garlic powder on top.

Cover and make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes. When time is up let pot sit for 10+ minutes and then move valve to venting. Remove the lid.

Gently stir. Sprinkle the cheese on top and let it melt. Serve and enjoy!

Notes/Tips

  • Serve with Sautéed Green Beans with Garlic.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • If you don’t want to brown in batches then do the browning step on the stovetop in a large pan.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Browned beef cubes with potatoes, creamy sauce and cheese made in the Instant Pot.


Ingredients

Scale
  • 1 Tbsp canola oil
  • 2 pounds beef stew meat
  • 2 tsp montreal steak seasoning
  • 1 cup diced onion
  • 1/2 cup beef broth
  • 2 pounds Russet potatoes, peeled and cut into 1/2 inch cubes
  • Salt and pepper
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 tsp garlic powder
  • 1 cup shredded cheddar cheese

Instructions

    My son made this with his girlfriend and loved it so I decided to make it, too. Pure comfort food!!!
    The only thing I didn’t do was to add salt. I always have to watch my sodium intake. It wasn’t missed.

    I didn’t have any montreal steak seasoning so I used Cajun seasoning, so it was a little bit spicy, but I love spicy. I would love to make again with actual montreal steak seasoning. I loved the cubed beef roast vs ground beef, the texture was just excellent. I only did a 5 minute cook on the beef, because I used home grown local fresh beef, and I didn’t want to over cook a high quality beef. Still used a 10 minute cook, with the potatoes and beef in it.

    For Crockpot
    Step 1-3 on stove top, transfer to crockpot
    Step 4-6 add into crockpot and cook. I would guess long and slow is best for tender beef and potatoes..
    Step 7 add cheese and let melt.

    Same.. I don’t own an Insta Pot either and don’t want one either. I’d make this the same way but in the oven or Crock Pot, just following the same steps minus anything that says Insta Pot.

      why can’t you also show the crock pot recipe ? it’s always the insta pot.recipe. your recipes sound great, but I don’t try them because I don’t have an insta pot and I don’t want one.
