Suzie’s Casserole

This is such an easy and tasty recipe! I love dump and go dinners in my Instant Pot. You can be eating dinner in less than 30 minutes from start to finish with this easy chicken and rice dinner. It’s got good flavor thanks to seasonings like cumin, chili powder and garlic powder and the can of Rotel tomatoes bumps the flavor too. Enjoy!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Converted rice–or long grain white, basmati, jasmine
  • Chicken tenderloins–or chunks of chicken breast, chicken thighs
  • Onion powder
  • Garlic powder
  • Chili powder
  • Cumin
  • Kosher salt
  • Black pepper
  • Rotel–I used mild
  • Sour cream
  • Cheddar monterey blend–or another type of cheese you like
  • Cilantro

Steps

Pour broth into Instant Pot. Sprinkle in the rice. Place chicken tenderloins into pot evenly. Sprinkle the chicken with the onion powder, garlic powder, chili powder, cumin, salt and pepper. Dump the Rotel on top of chicken.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the sour cream and cheese.

Scoop onto plates and top with a bit of cilantro.

Notes/Tips

  • Serve with Fritos or tortilla chips, shredded lettuce, sweet corn, a side of black beans or some cornbread.
  • This recipe is gluten free.
  • I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

  • 1/2 cup shredded cheddar monterey blend
