Description
An easy Instant Pot dump and go dinner with chicken, rice, Rotel, sour cream and cheese.

- 1 1/2 cups chicken broth
- 1 cup converted rice
- 12 ounces chicken tenderloins
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 (10 oz) can Rotel
- 1/3 cup sour cream
- 1/2 cup shredded cheddar monterey blend
- Cilantro
Instructions
- Pour broth into Instant Pot. Sprinkle in the rice. Place chicken tenderloins into pot evenly. Sprinkle the chicken with the onion powder, garlic powder, chili powder, cumin, salt and pepper. Dump the Rotel on top of chicken.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir in the sour cream and cheese.
- Scoop onto plates and top with a bit of cilantro.
