Description
Slow cooker chicken thighs nestled in a cottage cheese lemon sauce.

- 2 Tbsp butter
- 1 shallot, diced
- 3 garlic cloves, minced
- 1 cup cottage cheese or ricotta cheese
- 1 Tbsp flour
- 1 small lemon, zested and juiced
- 4-6 boneless skinless chicken thighs
- Pinch of red pepper flakes
- 1 tsp garlic powder
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Heat a pan over medium high heat. Add in the butter and let it melt. Add in the shallot and saute for 3 minutes. Add in the garlic and saute for 30 seconds. Transfer to the slow cooker.
- Stir in the cottage cheese, flour, lemon zest and juice.
- Nestle the chicken thighs into the sauce. Sprinkle the red pepper, garlic powder, salt and pepper into the slow cooker.
- Cover slow cooker and cook on low for 3-4 hours.
- Serve the chicken with the sauce over the top.
