Description

Slow cooker chicken thighs nestled in a cottage cheese lemon sauce.


Ingredients

Scale
  • 2 Tbsp butter
  • 1 shallot, diced
  • 3 garlic cloves, minced
  • 1 cup cottage cheese or ricotta cheese
  • 1 Tbsp flour
  • 1 small lemon, zested and juiced
  • 4-6 boneless skinless chicken thighs
  • Pinch of red pepper flakes
  • 1 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Heat a pan over medium high heat. Add in the butter and let it melt. Add in the shallot and saute for 3 minutes. Add in the garlic and saute for 30 seconds. Transfer to the slow cooker.
  2. Stir in the cottage cheese, flour, lemon zest and juice. 
  3. Nestle the chicken thighs into the sauce. Sprinkle the red pepper, garlic powder, salt and pepper into the slow cooker. 
  4. Cover slow cooker and cook on low for 3-4 hours. 
  5. Serve the chicken with the sauce over the top.
