This recipe for Slow Cooker Turkey Taco Soup is a creamy and delicious, easy weeknight dinner. I am obsessed with easy soup recipes lately and this one fits the bill. I love soup because it’s so easy to throw everything in, let in cook all day, serve it for dinner (all in one meal). The end. Add two cans of beans and a can of corn to this soup to beef it up a little. Or keep it as is. It’s up to you.
Makes 4-6 servings
Ideal slow cooker size: 3-4 quart
Cooking time: 4-6 hours
1 (14 oz) can black beans
1 (14.5 oz) can diced tomatoes
1 cup picante sauce (mild, medium or hot…up to you)
1 cup water + 1 tsp chicken bouillon granules
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp garlic powder
1 lb ground turkey, browned and drained of any grease
1 cup sour cream
1 Tbsp flour
1 avocado, sliced
1. Dump the whole can of black beans in the slow cooker (juice and all). Add in the tomatoes, picante sauce, bouillon and water, cumin, chili powder, garlic powder and browned turkey.
2. Cover and cook on LOW for 4-6 hours or on HIGH for about 3 hours.
3. Bring the sour cream to room temperature and stir it together with the flour. Slowly stir it into the soup until melted and creamy.
4. Serve with sliced avocados. (and cheese and chips, if you want)
