Description

A fresh and delicious side dish of zucchini and elote corn. Make it in the oven or slow cooker. A perfect summer side. 


Ingredients

Scale
  • 1 medium zucchini, diced
  • 3 cups frozen sweet corn
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/8 tsp red pepper flakes
  • 1/4 cup mayonnaise
  • 1/4 cup shredded parmesan cheese
  • 1 tsp hot sauce
  • 2 Tbsp lime juice
  • 2 Tbsp butter, cut into 8 pieces

Instructions

  1. Heat oven to 350° F (or you can use a slow cooker)
  2. In a mixing bowl toss together the zucchini, corn, salt, pepper, garlic powder, onion powder and red pepper flakes. 
  3. In a small bowl whisk together the mayo, parmesan, hot sauce and lime juice. Fold it into the corn so that it’s covered in the sauce.
  4. Add the corn mixture into a baking dish (a 8×8 inch pan works well) or the slow cooker. Add the butter on top.
  5. Bake for 30 minutes in the oven or cook in the slow cooker on high for 2 hours.
  6. Serve and enjoy!
