Description
A fresh and delicious side dish of zucchini and elote corn. Make it in the oven or slow cooker. A perfect summer side.
Ingredients

- 1 medium zucchini, diced
- 3 cups frozen sweet corn
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/8 tsp red pepper flakes
- 1/4 cup mayonnaise
- 1/4 cup shredded parmesan cheese
- 1 tsp hot sauce
- 2 Tbsp lime juice
- 2 Tbsp butter, cut into 8 pieces
Instructions
- Heat oven to 350° F (or you can use a slow cooker)
- In a mixing bowl toss together the zucchini, corn, salt, pepper, garlic powder, onion powder and red pepper flakes.
- In a small bowl whisk together the mayo, parmesan, hot sauce and lime juice. Fold it into the corn so that it’s covered in the sauce.
- Add the corn mixture into a baking dish (a 8×8 inch pan works well) or the slow cooker. Add the butter on top.
- Bake for 30 minutes in the oven or cook in the slow cooker on high for 2 hours.
