Chicken and Wild Rice Soup:
I threw the soup together in the middle of the day, because it only takes 6-8 hours to cook. It was delicious, and the leftovers only lasted a day. The ingredients are easy to find, and this cost me about $1.20 per serving, which is amazing. The only issue I ran into is that I suppose my crockpot qualifies as “medium” rather than the large mentioned in the recipe (it’s a hand-me-down from my mom when I moved to college), so I didn’t have enough room to add the sauce in the crockpot, but I threw it in a giant pot instead. DELICIOUS. (I think that if you omit the rice, but follow all of the other directions, it’s very similar to a crustless chicken pot pie. I threw some Pilsbury biscuits in the oven in place of a pot pie crust and it’s pretty wonderful)
French Dip:
I like this recipe, though I do find the concept of dipping a sandwich a little strange. My biggest problem is that cook time is 10-12 hours, which means if I want to eat at a normal time (6-6:30pm), I have to be up before 8 am to put it together. I’m in college and 8 am just doesn’t work for me. Other than that, it was tasty, I had most of the ingredients (though I had to search for a rump roast since no stores around here seemed to have one when I went shopping), and once it’s put together, you have nothing to do but eat.
Unfortunately, it’s not very likely that I’d make it again only because it does take so long to cook and I don’t have the willpower to drag myself out of bed to assemble dinner.
So the creamy chicken and wild rice soup moves on to face-off against the creamy tortilla soup. Should be a good game!
