Recipe Highlight from Archives Past: Cheesy Corn and Peppers

If you’re going to some sort of potluck or bbq you may just want to make this delicious corn side dish.  It is seriously soooooo good.  It will be gone it two minutes, I promise.  It has a little Mexican flare to it with the peppers and cumin.  I made it again the other night to serve with some grilled chicken.  Everyone loved it.  Try it!!!  Click HERE for the recipe.

Recipe Highlight from Archives Past: Fruit, Nut and Wheatberry Salad

Although this recipe sounds weird, it is delicious.  Out of all the recipes I’ve made, I’ve probably made this one the most.  My husband loves it and it makes us both feel healthy.  It is a good side dish for dinner or perfect for breakfast.  The wheat is chewy, the apples are crunchy and the orange zest gives it a citrus zing.  Try it, you’ll like it.

I wonder if I can make this with quinoa. I cooked some quinoa the other day and need to make it into a salad or side dish of some sort.

Recipe Highlight from Archives Past: Witches Hats

So how do I say the plural version of witch?  Is it witches or witch’s?  Why don’t I remember this?  Is my brain completely gone since I’ve had kids?  It must be.  Anyhow, these witches (or witch’s) hats are super fun to make and SOOO  good.  I love how the chocolate is melted M&Ms.  These are fun dessert to make this time of year.  For the recipe, go here.

Recipe Highlight from Archives Past: Thai Peanut Noodles with Zucchini

I’ve had a bunch of zucchini laying around my house lately, as evidenced by the chocolate zucchini bread and the zucchini linguine.  I again put the zucchini to work with this Thai Peanut Noodle recipe.  It turned out delicious.  Serve over rice noodles, spaghetti or rice for a great summer meal.

Recipe Highlight from Archives Past: Root Beer Pulled Pork

Today we’re flashing back to October 2009 when I made this root beer pulled pork recipe.  I made it again the other day for the KSL morning show and thought I would share it with you again.  It’s a bit sweet and a good recipe if you’re going to be gone all day.  Cook the pork until it’s falling apart.  Mine took 9 hours or so on low.  This is a great recipe for summer since you don’t have to heat up your kitchen and you can enjoy delicious sandwiches on toasted buns.  Serve with coleslaw and fruit salad for a perfect summer meal!

Recipe Highlight from Archives Past

Reagan (4 years old here!) helping make the Witch’s Hats
If you love chocolate, you will love these festive treats.  They are so addicting!

Who loves Halloween?  Raise your hand!  Me me me!!!  Free candy.  What could be better?  My daughter has told me numerous times, “Mom, I’m going to get you all the chocolate I can!”  That’s my girl.  Then lately, my son (he’s three) has been acting up and being really defiant.  So he’ll tell me, “Mom, I not going trick or treating!”  In my head I just think, “good, then Reagan and I can go faster and get more candy!”  Of course I don’t say this out loud, I just say, “it’s up to you, Son.”  Then he says with his arms folded across his chest, “FINE!  I’ll go trick or treating!”  He is so weird.  Does he even understand what he is saying???

Anyhow, today’s recipe that I’d like to revisit is the Witch’s Hats.  They are so festive, fun and yummy!  If you love chocolate, like me, you’ll love this treat.  Luckily, I don’t usually have all the ingredients on hand for this recipe, because I would make them all too often if I did.  And I would be 4 sizes larger.

Recipe Highlight from Archives Past

Remember how there is 491 different slow cooker recipes on this site?

Um, yeah.  That’s a lot.  And I made 461 of them.  (I’m now high-fiving myself)

There is 269 different 4 or 5 star rated recipes!  That is a lot.  I want to go back and highlight a recipe that I’ve done in the past to bring it back to life if your mind (and mine for that matter).  These are recipes that I’ve done multiple times because they are easy, tasty, and budget friendly!

The first one that I want to highlight is Day 24 which was Baked Potatoes.

Huh?  Baked potatoes in the slow cooker?  Yes, yes you can.  And I do it all the time.  I actually prefer my potatoes in the slow cooker over the oven.  Plus you are saving energy and not heating up your entire house.  If you’re cooking for a crowd, free up some space in the oven by sticking your potatoes in the crockpot.
