Description

Air fried or oven-roasted fingerling potatoes with a crispy rosemary parmesan crust and a smooth buttery center. They are super fast and easy and may become your new favorite food!


Ingredients

Scale
  • 1 1/2 pounds fingerling potatoes, washed and cut in half lengthwise
  • 1 1/2 Tbsp olive oil
  • 1/2 tsp dried rosemary leaves
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/3 cup shredded parmesan cheese

Instructions

  1. Add all ingredients to a container with a lid and shake well to coat potatoes in oil and seasonings. 
  2. Place potatoes on a rack in your air fryer. Scrape out all remaining parmesan cheese and seasonings and dump it on top of the potatoes.
  3. Air fry at 400° F for 15 minutes (shake the basket half way through the cooking time).
  4. Serve the potatoes and enjoy! We like ours dipped in Olive Garden parmesan ranch dressing.

Notes

To bake in the oven: grease a baking sheet with 3 Tbsp of oil. Spread the seasoned potatoes in a single layer on the baking sheet. Bake at 425° F for about 20 minutes. Turn the potatoes and cook for another 15-20 minutes until the other side has browned.
