No Peek Casserole
This easy dump and go throwback recipe is a goodie! My family ate it all in one sitting even though I purposely made extras so we could have leftovers. Good thing it takes only about 5 minutes of prep time so I can make it again soon.
No peek casserole gets its name because the idea is to let the ingredients cook undisturbed to ensure proper absorption of flavors and even cooking without losing moisture. The original recipe is made in the oven but I created the Instant Pot version of the dish and it worked out well (and it was very quick to make!).
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon
- Converted rice–or long grain white rice
- Chicken tenderloins–or 1 inch cubes of boneless skinless chicken thighs
- Onion soup mix
- Cream of chicken soup–I use Campbell’s. You can also use cream of mushroom or cream of celery.
- French fried onions
Steps
Add broth into Instant Pot. Add in half of the chicken evenly into bottom of pot. Then sprinkle the rice on top. Place the rest of the chicken evenly over the rice. Sprinkle the chicken with onion soup mix. Spoon the cream of chicken soup over the top. Don’t stir.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
Stir.
Sprinkle the french fried onions on top. Serve and enjoy!
Notes/Tips
- Serve with roasted broccoli, green beans or asparagus or a green salad.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- Try making your own cream of chicken soup if you don’t like the canned stuff.
- Feel free to add vegetables into your casserole.
