New Year’s Good Fortune Soup

Description

A super flavorful soup with black eyed peas, ham and collard greens that can be made in the Instant Pot or Crockpot. A perfect way to ring in the new year. 


Ingredients

Scale
  • 1 Tbsp bacon grease
  • 1/2 cup diced onion
  • 6 cloves of garlic, minced
  • 4 cups chicken broth
  • 1 large carrot, peeled and sliced
  • 8 ounces ham cubes
  • 2 tsp apple cider vinegar
  • 1 (10 oz) can Rotel (I used mild)
  • 1/2 tsp dried thyme leaves
  • 1 (15 oz) can black eyed peas, rinsed and drained
  • 3 collard green leaves, stems removed and chopped
  • 2 chipotle chiles in adobo sauce*, chopped

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the bacon grease and onions. Saute for 4 minutes. Stir in the garlic and saute for 30 seconds. Add in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  2. Add in the carrot, ham, vinegar, Rotel, thyme, black eyed peas, collard greens and chiles. 
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes (if you don’t have a soup button use low pressure for 10 minutes). When time is up let pot sit for 10 minutes and then move valve to venting. 
  4. Ladle into bowls and serve. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the bacon grease and onions. Saute for 4 minutes. Stir in the garlic and saute for 30 seconds. Transfer to the slow cooker.
  2. Stir in the broth, carrot, ham, vinegar, Rotel, thyme, black eyed peas, collard greens and chiles. 
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours
  4. Ladle into bowls and serve.
