Description
A super flavorful soup with black eyed peas, ham and collard greens that can be made in the Instant Pot or Crockpot. A perfect way to ring in the new year.
Ingredients

- 1 Tbsp bacon grease
- 1/2 cup diced onion
- 6 cloves of garlic, minced
- 4 cups chicken broth
- 1 large carrot, peeled and sliced
- 8 ounces ham cubes
- 2 tsp apple cider vinegar
- 1 (10 oz) can Rotel (I used mild)
- 1/2 tsp dried thyme leaves
- 1 (15 oz) can black eyed peas, rinsed and drained
- 3 collard green leaves, stems removed and chopped
- 2 chipotle chiles in adobo sauce*, chopped
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the bacon grease and onions. Saute for 4 minutes. Stir in the garlic and saute for 30 seconds. Add in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the carrot, ham, vinegar, Rotel, thyme, black eyed peas, collard greens and chiles.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes (if you don’t have a soup button use low pressure for 10 minutes). When time is up let pot sit for 10 minutes and then move valve to venting.
- Ladle into bowls and serve.
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the bacon grease and onions. Saute for 4 minutes. Stir in the garlic and saute for 30 seconds. Transfer to the slow cooker.
- Stir in the broth, carrot, ham, vinegar, Rotel, thyme, black eyed peas, collard greens and chiles.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours
- Ladle into bowls and serve.
