Never Forget Casserole
Today’s recipe is taken from an old fashioned recipe that’s usually called “forgotten chicken” or “forgotten chicken casserole”. But I decided to change it up to NEVER FORGET casserole since it is 9/11 and we should never forget what happened that day and what we’ve learned from it.
One thing you’ll love about this dinner is that there are only 4 ingredients (no cream soups). It is FAST to prepare. Plus with only a 4 minute pressure cook time (10 minute natural pressure release) you can be eating in just a few minutes. It’s also quite delicious! It has a creamy element with cream cheese and the onion soup mix flavors the chicken and rice perfectly. Enjoy!
Ingredients/Substitution Ideas
For this recipe you’ll only need 4 ingredients (plus water)! This makes it a perfect recipe for high schoolers or college kids to prepare. My son helped me make this recipe and he couldn’t believe how easy it was. It made him get excited about cooking.
- Boneless skinless chicken thighs–you can also use chicken tenderloins
- Water
- Lipton’s onion soup mix–or another brand you like
- Converted rice–or long grain white rice
- Cream cheese

Notes/Tips
- I served this with roasted broccoli and sweet potatoes.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- This recipe can easily be doubled or halved. Keep the same cooking time.
- This recipe is gluten-free as long as your onion soup mix is gluten-free. Lipton brand should be gluten-free.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- Other recipes you can make with 4 ounces of cream cheese are Instant Pot Fancy Potatoes and Henny Penny Chicken.
- What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.

Description
4-ingredient, dump and go chicken and rice made fast in your Instant Pot.
Ingredients
- 1 1/2 pounds boneless skinless chicken thighs
- 1 1/2 cups water
- 1 packet Lipton’s onion soup mix
- 1 cup converted rice
- 4 ounces cream cheese, cut into cubes
Instructions
- Trim the chicken of excess fat and cut into 1 inch cubes. Add the chicken into the Instant Pot.
- Pour in water. Sprinkle in the onion soup mix and the rice. Dump the cream cheese on top. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir. Serve and enjoy!

Tried this based on the simplicity of four ingredients. Understand cream cheese won’t be melted in once you open the pot but will make this so creamy as you stir! Excellent!

Im curious as I have some cream cheese haters but a few of us absolutely love it. I do cook with cream cheese and in some recipes they don’t even know it’s there as long as I don’t tell them, lol. How strong is the cream cheese flavor and do you think they would realize that it’s in there? Thank you so much!
hmmm, it’s pretty creamy. you may want to halve the amount of cream cheese and then stir in a bit of sour cream or cream when it’s done cooking.
Why do you only instant pot recipes. I don’t have one,but they sound delicious. Please correct my problem.
With all due respect, save up and buy an instant pot. it will be the best investment you ever make. technically I have a power pressure cooker XL. I cannot tell you how many meals I have cooked with that thing. plus the fact that the pressure cooker has a way that blends the flavors of the foods so much better than a Crock-Pot. I actually got mine as a Christmas present one year. didn’t cost me a dime and it is my most used item by far. and I have a slow cooker and an air fryer also sitting in my kitchen I use a lot. I love this site and the lady who provides recipes. I use her recipes more than anybody else. (and I am not a relative or know her personally. LOL) get one. you won’t regret it …..have a great day!!! could this be modified with frozen chicken and offset perhaps with brown rice that will cook for the longer timeframe?
Yes you can totally do that. Use brown rice instead and frozen chicken (not cut up) and cook for 25 minutes with a 10 minute NPR
