Description

An easy Instant Pot dish with sausage, rice, peppers and onions.


Ingredients

Units Scale
  • 1 pound ground pork sausage
  • 1 small yellow onion, diced
  • 2 ribs of celery, sliced
  • 1 green bell pepper, diced
  • 1 3/4 cups water
  • 1 cup converted rice
  • 1 package Lipton's dry chicken noodle mix
  • 1/4 cup sliced almonds, optional

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in onion, celery and bell pepper. Brown for 5 minutes.
  2. Pour in half of the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rice and Lipton’s mix. Pour in the remaining water.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir and serve topped with almonds, if desired.
