Description

Seasoned ground beef with red potatoes, sweet corn, tomato sauce and cheddar cheese. An easy, delicious meal made in your Instant Pot or Crockpot.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/2 cup beef broth
  • 24 ounces red potatoes, cut into 1/2 inch cubes
  • 1 1/2 cups frozen sweet corn
  • 2 (8 oz) cans tomato sauce
  • 1 cup shredded sharp cheddar cheese

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown for 5 minutes, drain off excess grease. Stir in the salt, pepper, onion powder, garlic powder and smoked paprika.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Dump in the potatoes, corn and tomato sauce. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid.
  5. Stir in the cheese. Salt and pepper to taste. Serve. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Brown for 5 minutes, drain off excess grease. Stir in the salt, pepper, onion powder, garlic powder and smoked paprika. Transfer to the slow cooker. 
  2. Stir in the broth, potatoes, corn and tomato sauce. 
  3. Cover and cook on low for 4 hours or on high for 2 hours.
  4. Stir in the cheese. Salt and pepper to taste. Serve.
