Description

Instant Pot recipe with ground beef, rice, fire roasted tomatoes, parmesan cheese and basil. An easy and fast meal. 


Ingredients

Scale
  • 1 pound lean ground beef
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes
  • 1 cup converted rice
  • 1 1/2 cups beef broth
  • 1 (14.5 oz) can fire roasted tomatoes
  • 1/4 cup heavy cream
  • 1/4 cup shredded parmesan cheese
  • 2 Tbsp chopped fresh basil
  • Salt to taste

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Stir in the garlic, Italian seasoning, salt, pepper and red pepper. 
  2. Stir in the rice and cook for one minute.
  3. Add in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  4. Dump in the tomatoes. Cover Instant Pot and lock lid in place. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  5. Stir in the cream, parmesan and basil. Add a pinch of kosher salt (or to taste). 
  6. Serve and enjoy!
