Description
Instant Pot recipe with ground beef, rice, fire roasted tomatoes, parmesan cheese and basil. An easy and fast meal.

- 1 pound lean ground beef
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp crushed red pepper flakes
- 1 cup converted rice
- 1 1/2 cups beef broth
- 1 (14.5 oz) can fire roasted tomatoes
- 1/4 cup heavy cream
- 1/4 cup shredded parmesan cheese
- 2 Tbsp chopped fresh basil
- Salt to taste
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Stir in the garlic, Italian seasoning, salt, pepper and red pepper.
- Stir in the rice and cook for one minute.
- Add in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Dump in the tomatoes. Cover Instant Pot and lock lid in place. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir in the cream, parmesan and basil. Add a pinch of kosher salt (or to taste).
