Sour Cream Chicken Taco Filling:
This recipe was pretty simple to make, I had a little brain glitch cause it called for a 13.75 ounce can of cream of chicken soup and all I had was 10.75…I added a tiny bit of water to compensate, and I’m thinking that was a mistake! It turned out really soupy and was way too runny for our burritos. I personally thought something about the flavor was a bit off. I’m thinking it was a little strong on the cumin and red peppers. My 7 year old, however, thought it was amazing. She ate it as a dip for her chips and just couldn’t get enough. She also suggested eating it as a soup! This recipe was pretty cheap to make, and except for the red pepper could be made with things I had on hand.
Massaman Curry:
This recipe took a little longer to prep since I had to cut up the potatoes and chicken-but I have to do this whenever I want curry, so it wasn’t a big deal. I couldn’t find any mild curry paste, so I did end up decreasing the paste by a tablespoon so my husband wouldn’t complain 🙂 It didn’t taste at all like the curry we are used to, but we really enjoyed it. I loved the creamy flavor from the coconut milk and peanut butter. I may have had a few helpings 🙂 I don’t think most people would have the ingredients for this recipe on hand, but I think it was worth the trip to the store for coconut milk and curry paste (coincidentally these are the two items that also made the recipe a bit more pricey).
My husband and I would definitely choose the curry over the taco filling. It just had such a richer flavor. My kids preferred the taco filling, but they ate the curry without too much trouble 🙂

Recipe 1 notes and review: I haven’t really worked much with chicken thighs, so I was excited to see it as an ingredient in both recipes. I bought organic chicken thighs from Costco, which raised the price slightly but still much cheaper than chicken breasts.
As for the Mushroom Tarragon Chicken: I’m not usually a big fan of tarragon because it can have a pretty strong taste, but I LOVED it in this dish, especially the way it complimented the earthiness of the mushrooms. I used fresh herbs, lots of mushrooms, and added a can of quartered artichoke hearts, as Karen suggested. I served it over brown basmati rice and garnished with some more tarragon leaves. I thought the flavor was really nice and I would definitely make this again. Could this be the Cindarella recipe of the tourney? We will find out!

Recipe 2 notes and review: First, let me start off by saying I absolutely love enchiladas, so I was excited for this one. And by looking at the recipes on paper, I thought this would be my clear winner. But that’s why they don’t play basketball games (or slow cooker tournaments) on paper. While I liked the idea of these enchiladas, for some reason they left a little something to be desired. Maybe it was the type of tortilla I used, or the amount of salsa, but for some reason they did not hold up very well at all. They ended up looking more like enchilada pie….which is totally fine! Just be prepared for that. I did like them, but I liked the mushroom tarragon chicken better, and I think I’ll just stick to enchiladas in the oven. (I DO recommend grated cotija cheese on top for an authentic flavor!)

The chicken and stuffing was very easy to prepare. I gave it a 9 because I had to dirty another pot from cooking the stuffing. Unfortunately, my kids did not like it so I will probably not make it again even though I liked it. I thought the flavor was great and tasty. The value scored a perfect 10 because it was very inexpensive with so few ingredients.

The Chicken and Broccoli Pasta was a pleasant surprise. As I was making it I thought that my family would not like it, but we all ended up liking it. The prep was easy, just takes a little extra time because of all the chopping. Both of these recipes were mediocre…no one really loved them, but I would make this one again. This was a very different slow cooker recipe from the traditional meat with gravy type foods… which I appreciated. I thought the flavor was great with the combination of all the veggies and spices and the chicken turned out really tender. This one was also very budget friendly, just more ingredients so it scored lower.
