March Madness Results: Soups

Let’s take a look at the first 2 sets of soup match-ups and see who was able to pull through with a win.
The first game was between 2 beef and barley soups.  There was only room for one beef and barley soup to advance in the tournament and I was anxious to find out which recipe was better.

Beth was our volunteer cooking up these two soups.  She said that the first soup’s flavor was off.  She said that Beef and Barley 2 was a big hit…“LOVED this soup! Made it a second time for my mom’s 92nd
birthday as one of her presents! The texture was thick & creamy, rather
lush. There is a wonderful depth of flavor. Lentils + barley + beef =YUMMY!!!”  I could tell that she loved it as it scored 100 points out of 100!!

The second pair of soups were both tomato and both scored high by volunteer, Candy.  It came down to the wire on this one.

Candy said that the Tomato Basil Parmesan was “was absolutely delicious and smelled like a pizza
while it was cooking! The bits of vegetables were so tasty, and the parm took
it to a whole new level. Seasoning amounts were perfect (I prefer using dried
herbs in the crock). My only negative using two other pans with the
final prep, but it was worth every step! Would make a wonderful first course at
a fancy party, or a great casual lunch meal. It would also be good blended into
a creamy bisque. Will definitely make this again.

The Tomato Basil Ravioli was so flavorful, but throw in chewy, cheesy ravioli and it was fabulous. I’m
convinced that slow-cooking tomatoes and onions makes a much better soup than
on top of the stove – the tomatoes tasted fresh from the garden. It needed no
salt at the end, just a few grinds of fresh black pepper. After adding the
ravioli, I cooked for 30 min on high and it was perfect. Convenient,
inexpensive pantry/freezer ingredients made this an anytime go-to soup. It
re-heats very well and is perfect for next day lunch.”

So the Beef and Barley Soup1 and the Tomato Basil Ravioli Soup will play each other in the next round!  Very exciting since they both scored almost 100 points each.

    I am excited to try the Tomato Basil Ravioli soup! Barley scares me, we ate a lot of Barley soup when I was going up =(
