March Madness Day 1: Slow Cooker Edible Cooked Carrots

1 lb carrots, peeled and sliced about 1/4 inch thick
1/2 cup water
1 tsp sugar
1/2 tsp salt
1/4 tsp garlic powder
1 tsp parsley flakes
1 tsp lemon pepper
1 Tbsp butter

Place carrots, water, sugar, and salt in slow cooker.  Cover and cook on LOW for 4 to 6 hours.  Drain water and return carrots to slow cooker.  Stir in garlic powder, parsley, lemon pepper and butter.  Salt and pepper to taste.

Review:
I am not a fan of cooked carrots.  They usually are pretty gross.  Kids don’t like them and most adults don’t either.  However, I’m here to say that this recipe is actually pretty darn good.  The seasonings are perfect and the sugar gives it a touch of sweetness.  I brought this to Sunday dinner at the in-laws and everyone agreed that they were surprisingly good.  4 stars.

    Denice, I'm sure you could use baby carrots and they would turn out fine. Depending on how thick they are will determine how long to cook.

    Could you use baby carrots for this recipe? That would make it even easier? Any suggestions for adjustments if baby carrots were used instead?

    We have carrots a lot (since it's one of the few veggies my hubby will eat!) However, my 8 year old HATES them and it's always a battle to get her to even eat one tiny little carrot. I gave these carrots a try today and they were a hit! Even with the 8 year old…she ate all 4 carrot pieces and said she would eat them again if I cooked them this way!
