Magic Soup–Instant Pot or slow cooker lemon dill chicken noodle soup with chicken, ginger, cabbage, carrots and onions. Warms you right up!

Magic Chicken Noodle Soup in the instant pot or crockpot

Magic Soup

This soup is magic! If you’re feeling under the weather (or just want something light but nourishing) it will make you feel so much better. It’s like a rockin’ version of chicken noodle soup. With the addition of lemon and dill it’s so much better than normal chicken soup. The quick 1-minute cook time (plus natural pressure release) keeps the veggies tender and the chicken and noodles perfectly cooked. Enjoy!

Ingredients/Substitution Ideas

  • Olive oil
  • Onion
  • Celery
  • Chicken broth–or water and Better than Bouillon
  • Carrots
  • Ground ginger
  • Kosher salt
  • Black pepper
  • Lemon zest
  • Cabbage
  • Garlic
  • Dried dill
  • Eggs noodles
  • Cubed chicken–cooked or uncooked
  • Fresh lemon juice

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onions and celery and saute for 4 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the carrots, ginger, salt, pepper, lemon zest, cabbage, garlic, dill, egg noodles and chicken.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 1 minute. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in the lemon juice. Salt and pepper to taste. Ladle into bowls and serve.

Notes/Tips

  • Serve with homemade french bread and butter.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Instant Pot or slow cooker lemon dill chicken noodle soup with chicken, ginger, cabbage, carrots and onions. Warms you right up!


Ingredients

Scale
  • 1 1/2 tsp olive oil
  • 1/2 cup diced onions
  • 1 rib of celery, diced
  • 6 cups chicken broth
  • 2 carrots, peeled and sliced
  • 1/2 tsp ground ginger
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp lemon zest
  • 1 cup shredded cabbage
  • 5 garlic cloves, minced
  • 1 tsp dried dill
  • 4 ounces eggs noodles
  • 3 cups cubed chicken (cooked or uncooked)
  • 2 Tbsp fresh lemon juice

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onions and celery and saute for 4 minutes.

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the oil and swirl around. Add in the onions and celery and saute for 4 minutes. Transfer to the slow cooker.
  2. Add in the broth, carrots, ginger, salt, pepper, lemon zest, cabbage, garlic, dill, egg noodles and chicken.
  3. Cover and cook on high for 2 hours. 
  4. Stir in the lemon juice. Salt and pepper to taste. Ladle into bowls and serve.

    Can this be canned or frozen. When I’m not feeling good the last thing I want to do is cook.

      I am not sure about canned but you could freeze it for sure. I would make it without the noodles and freeze it. Then when you’re ready to eat it you can warm it up and add in some cooked noodles. That way the noodles won’t get mushy and soak up all the broth.
