Magic Casserole–a quick and easy sausage and dumplings casserole made in your Instant Pot.
Magic Casserole
This dish combines the savory goodness of sausage with the delightful fluffiness of dumplings into a magic dinner that will get oohs and ahhs from your family. Part of the magic is that it is so easy to make. After browning the sausage you add everything else in and you set the pot to 3 minutes and forget about it. Once it’s done cooking, you give it a stir and serve it up. This is creamy and indulgent and a little serving goes a long way!
Ingredients/Substitution Ideas
- Ground turkey sausage–you can also use regular sausage, just make sure to drain off grease.
- Onion–yellow or white
- Chicken broth–or water and Better than Bouillon*
- Salsa verde–I like the herdez brand. You can also use a 4 ounce can of diced green chiles.
- Frozen sweet corn
- Cream cheese
- Pillsbury™ Original Crescent Dough Sheet–look for it by the canned biscuits. It’s in a skinnier tube.
Steps
Turn Instant Pot to saute setting. When display says HOT add in the ground sausage and break it up. Add in the diced onion. Brown for about 5 minutes.
Pour in the broth and scrape the bottom of the pot so that nothing is sticking. Turn off Instant Pot.
Drizzle the salsa verde on the top. Dump the corn and cream cheese into the pot. Unroll the crescent roll sheet and use a pizza cutter to cut it into 1 inch squares. Add the squares into the pot, as much as in one layer as possible.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
Stir well. Scoop onto plates or into bowls and serve.
Notes/Tips
- Serve with fruit salad and collard greens or spinach.
- Try adding in sliced mushrooms with the sausage.
- Try adding in a package of frozen veggies instead of the corn for more color and more veg.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

I don’t like being negative, but I don’t find instant biscuits nutritionally sound; white sugar, flour and highly saturated fats. Please include some recipes that don’t include pre-made foods.

Would the flavor change too much if you use ground turkey in place of the ground turkey sausage?

Yes you’ll need to add in plenty of seasonings and salt with the ground turkey to make up for the flavor loss. Add in 1 teaspoon brown sugar
3/4 teaspoon of salt
1/2 teaspoon pepper
3/4 teaspoon ground sage
3/4 teaspoon thyme
1/4 teaspoon marjoram
1/4 teaspoon red pepper flakes
optional: pinch of ginger, clove of minced garlic

Is there something besides cream cheese that will give similar consistency and flavor? I am dairy-free. Will coconut cream suffice?

I am not familiar with coconut cream so I can’t say for sure how that would change the overall flavor profile of the dish. Is there such a thing as dairy free cream cheese?

Yes, there is dairy free cream cheese. But it’s kind of gross and makes dishes less palatable. Coconut cream is pretty mild and can be used in place of heavy cream. It’s not as thick as cream cheese, though. Is there any other substitution?
