Description
Yellow rice, black beans, Rotel tomatoes and cheese made fast in your Instant Pot.
Ingredients

- 1 1/2 tsp olive oil
- 1/2 cup diced onion
- 2 cups water
- 1 (6.9 oz) package Zatarain's yellow rice
- 1 large carrot, large dice
- 1/2 green bell pepper, diced
- 1 (15 oz) can black beans, rinsed and drained
- 1 (10 oz) can Rotel
- 1 cup shredded colby and monterey jack blend
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onion and saute until softened.
- Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice mix. Then dump in the carrot, pepper, beans and Rotel. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir in the cheese. Salt and pepper to taste and serve.
