Description

An easy, protein-packed egg casserole loaded with sausage, spinach, zucchini, and cheddar. It’s perfect for meal prep or feeding a crowd.


Ingredients

  • 16 oz ground breakfast sausage
  • 1 cup diced onion
  • 2 cups chopped spinach
  • 1 medium zucchini, shredded
  • 12 eggs
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 cup Greek yogurt
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Heat oven to 350° F. Spray a 9×13 inch baking dish with non-stick cooking spray.
  2. Heat a pan over medium high heat. Add in the sausage and break it up. Brown for 4 minutes. Stir in the onion and cook for 4 more minutes. Drain off excess grease. 
  3. Spread the sausage into the bottom of the 9×13 inch pan.
  4. Add spinach and zucchini over the top of the sausage.
  5. In a mixing bowl add the eggs, salt, pepper, garlic powder and Greek yogurt. Whisk until smooth. Pour the mixture over the top of the zucchini. 
  6. Sprinkle cheddar over the top.
  7. Bake for 45 minutes. 
  8. Slice and serve.
