Description
An easy, protein-packed egg casserole loaded with sausage, spinach, zucchini, and cheddar. It’s perfect for meal prep or feeding a crowd.

- 16 oz ground breakfast sausage
- 1 cup diced onion
- 2 cups chopped spinach
- 1 medium zucchini, shredded
- 12 eggs
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 cup Greek yogurt
- 1 1/2 cups shredded cheddar cheese
Instructions
- Heat oven to 350° F. Spray a 9×13 inch baking dish with non-stick cooking spray.
- Heat a pan over medium high heat. Add in the sausage and break it up. Brown for 4 minutes. Stir in the onion and cook for 4 more minutes. Drain off excess grease.
- Spread the sausage into the bottom of the 9×13 inch pan.
- Add spinach and zucchini over the top of the sausage.
- In a mixing bowl add the eggs, salt, pepper, garlic powder and Greek yogurt. Whisk until smooth. Pour the mixture over the top of the zucchini.
- Sprinkle cheddar over the top.
- Bake for 45 minutes.
- Slice and serve.
