Lost and Found Casserole

It’s zucchini season! My mother-in-law sent me home with several zucchinis from her garden and I put a couple of them to good use in this tasty dish. This is a simple recipe you can whip up in your slow cooker or on the stovetop in just a few minutes. The chicken and zucchini are well seasoned and then the melty cheese just brings it all together. Enjoy!

Ingredients/Substitution Ideas

  • Olive oil–or canola oil
  • Onion–yellow or white
  • Boneless skinless chicken thighs–or chicken breasts
  • Zucchini–about the size of a banana. You don’t want the overgrown baseball bat zucchinis.
  • Dried basil
  • Kosher salt
  • Garlic powder
  • Black pepper
  • Sharp cheddar cheese
  • Crispy fried onions–like the kind you put on green bean casserole

Steps

Heat a pan over medium high heat. Add in the oil and swirl around. Add in the onion and saute for 4 minutes. Transfer to the slow cooker.

Stir in the chicken, zucchini, basil, salt, garlic powder and pepper.

Cover and cook on low for 90 minutes to 2 hours. 

Stir in the cheese and fried onions.

Serve and enjoy!

Notes/Tips

  • Serve with a side of garlic bread, a dinner roll or some cornbread.
  • I used my 6 quart Ninja Slow Cooker. I like this slow cooker because it has a stovetop function on it so you can saute inside the slow cooker instead of getting out a pan on the stove.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days.

Description

An easy slow cooker or stovetop recipe with chicken, zucchini, cheese and crispy fried onions. 


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1/2 cup finely diced onion
  • 3 boneless skinless chicken thighs, cut into 1 inch pieces
  • 2 medium zucchini, quartered and cut into 1 inch pieces
  • 1 tsp dried basil
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 ounces of sharp cheddar cheese, shredded
  • 1/2 cup of crispy fried onions

Instructions

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the oil and swirl around. Add in the onion and saute for 4 minutes. Transfer to the slow cooker.
  2. Stir in the chicken, zucchini, basil, salt, garlic powder and pepper.
  3. Cover and cook on low for 2 hours. 
  4. Stir in the cheese and fried onions. Serve and enjoy!

Stovetop Instructions:

  1. Heat a pan over medium high heat. Add in the oil and swirl around. Add in the onion and chicken and saute for 5 minutes.
  2. Stir in the zucchini, basil, salt, garlic powder and pepper. Cook on medium heat until zucchini is tender. 
  3. Stir in the cheese and fried onions. Serve and enjoy!
