Kickin’ Chili (Dollar Store Challenge)

Easy easy easy easy chili recipe in the slow cooker!

Blair from allfreeslowcookerrecipes.com issued a challenge to me:  Make a slow cooker recipe using only products from the dollar store.  I accepted the challenge (of course).  I headed to Dollar Tree with my daughter and we had fun looking up and down each aisle and then finally deciding on a spicy chili.  It was so easy…not to mention it serves 6 and cost $4.00!  If you’re not into spicy stuff then just buy regular diced tomatoes instead of the tomatoes with the green chiles.

Makes 6 servings

2 (13 oz) cans of chili with beans ($2.00)
2 (13 oz) cans of diced tomatoes with green chiles (came in a bonus 2-pack so they were $1.00 total)
1 (14 oz) can corn, drained ($1.00)

1.  Combine all the ingredients in the slow cooker.  Stir until combined.
2.  Cover and cook on LOW for 4-6 hours until flavors are blended.
3.  Serve with sour cream and cheese, if desired.

Review:
Easiest recipe ever.  Plus it was totally budget-friendly.  It was a little too spicy for my taste (next time I would just buy regular diced tomatoes).  I added some sour cream to cool it down a bit and that helped.  But for those of you who like things hot hot hot you’d love this.  If you’re cooking- challenged this is a good way to make “homemade” chili to bring to the potluck or to the neighbor’s house without really having to cook (they’ll think your a star).

    Where I live, larger cans of Tomatoes, beans and corn are around .89 at the grocery store as opposed to less for more at the $ store. Planned on making a pot of chilli today so going to try this recipe with the addition of ground beef.
    Looking forward to dinner tonight.

    My one complaint about canned chili is the “meat” that they include in the mix. Even “vegetarian” chili has fake meat in it. So I do better with pinto beans (or whatever kind you prefer) and a chili mix. Add some browned ground meat if you can afford it these days.

    I have to laugh at those comments that shun canned foods. Do these people also grind their own flour, milk their own cow, churn their own butter…well, you get the idea. We are blessed to have so many convenient products available to us in this country where we can usually trust the quality.

    I like the idea itself cause we only get 15 dollars a month in food stamps now and I buy a lot at the Dollar Store sometimes. I would probably add some turkey or hamburger for more protein cause we have IBS. But I agree with all of you we ne3ed more budget-friendly meals.

    I have had to shop the dollar store to feed my mother, son and myself. I think more recipes and meal suggests would be good.

    Thanks for the recipe! We use canned tomatoes and then pork and beans and add our on chili powder so it is temperature controlled. This is awesome you can get these things at the dollar store. You should do more dollar store recipes!

    for those on a fixed income who miss the food stamp mark by a few bucks (I make $2 too much on my disability LOL) and this will feed me for three or four days – it's a God send – I have to choose between my prescriptions and groceries MOST months – and have gone up to four days with NO food so all you bitchers quit complaining about it being can opening and loved the serving over rice idea – I ate – THAT was what counted for me

    My only concern is the sodium level. If canned food is an occasional treat, OK but our bodies need "real" food.

    This is a great chili recipe! Loved the corn in it. However, like some, I can't take much heat, so I put it over rice. I too am economically challenged. The rice "cools" it off and makes it go further.

    I agree. Sometimes it's also all you can afford! Our budget is so tight, sometimes $5/meal dinners is too expensive. A meal like this can be a dream. (Husband is ill, will only get progressively worse, cannot ever work again.)

      Try making rice and add black beans and diced tomatoes! You can even add corn if you would like! A cheap meal that taste good and is filling!

      I am 75 with arthritis, and a muscle disease that makes standing for even half an hour painful. I have been making “can opening” meals and microwaved frozen meals for years now. That’s cooking to me. With planning and recipes like this, you can have healthy, good tasting meals. One of my favorite is canned chili over tostados with cheese and salsa. Add a salad or mixed vegetables from the frozen food section to it and a great dinner, easy, quick and not expensive.
