Description
An easy one pan breakfast or brunch dish with eggs, bacon, sausage, spinach and more.

- 2 pieces of thick bacon, chopped
- 1/2 pound breakfast sausage
- 1 cup cottage cheese
- 5 eggs
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp italian seasoning
- Pinch of red pepper flakes
- 1 cup chopped spinach
- 1/2 cup shredded cheddar cheese
- Diced or sliced tomatoes, for topping
Instructions
- Heat oven to 375° F.
- Heat an oven safe pan (I used a cast iron skillet) over medium high heat. Add in the bacon and cook until almost crispy then add in the sausage and brown. Drain off excess grease. Turn off heat.
- In a bowl whisk together the cottage cheese, eggs, salt, pepper, garlic powder, onion powder, Italian seasoning, red pepper flakes, spinach and cheese.
- Pour the egg mixture into the pan and stir.
- Place in the oven and bake for 20-25 minutes.
- Top with tomatoes, slice and serve.
