Description

An easy one pan breakfast or brunch dish with eggs, bacon, sausage, spinach and more. 


Ingredients

Scale
  • 2 pieces of thick bacon, chopped
  • 1/2 pound breakfast sausage
  • 1 cup cottage cheese
  • 5 eggs
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp italian seasoning
  • Pinch of red pepper flakes
  • 1 cup chopped spinach
  • 1/2 cup shredded cheddar cheese
  • Diced or sliced tomatoes, for topping

Instructions

  1. Heat oven to 375° F. 
  2. Heat an oven safe pan (I used a cast iron skillet) over medium high heat. Add in the bacon and cook until almost crispy then add in the sausage and brown. Drain off excess grease. Turn off heat.
  3. In a bowl whisk together the cottage cheese, eggs, salt, pepper, garlic powder, onion powder, Italian seasoning, red pepper flakes, spinach and cheese.
  4. Pour the egg mixture into the pan and stir. 
  5. Place in the oven and bake for 20-25 minutes. 
  6. Top with tomatoes, slice and serve.
