June Warren’s Casserole
Today’s recipe comes from Aloha Dreams. The author says it is a “GREAT make ahead potato dish. Better than mashed!” It’s different than your normal hashbrown casseroles that have cheese and cream of chicken soup. It’s more like mashed potatoes than hashbrowns. The hashbrowns become creamy and buttery and delicious. If you’re craving mashed potatoes but don’t want to boil potatoes and mash them…try this hashbrown version instead. It’s quite like magic!
Ingredients/Substitution Ideas
- Frozen hashbrowns
- Kosher salt
- Seasoned salt
- Butter
- Cream
Steps
Heat oven to 325° F. In a large mixing bowl stir together the hashbrowns, kosher salt, seasoned salt. Cut 3 tablespoons of the butter into small pieces. Stir the butter into the mixture as well.

Spray a 9×9 inch baking dish with non stick cooking spray. Spread the hashbrowns into the pan evenly.
Pour the cream evenly over the top.
Melt the remaining tablespoon of butter and drizzle it over the top.

Bake for 1 hour. Turn oven to broil and broil until the top browns up.
Serve and enjoy!

Notes/Tips
- Serve as a side dish to chicken, pork chops, steak, roast, etc.
- This recipe is simple to double. Double the ingredients and bake in a 9×13 inch pan.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
