Description
An easy dump and go Instant Pot or slow cooker recipe with tender bites of pork, black eyed peas, corn, tomatoes and finished off with lime juice.
Ingredients

- 22 ounces pork stew meat (I used a package of Willamette Valley hatch green chile seasoned pork stew meat)
- 3 cups chicken broth
- 1 (15 oz) can corn, drained
- 1 (15 oz) can black eyed peas, rinsed and drained
- 1/3 cup converted rice
- 1 (14.5 ounces) can petite diced tomatoes
- 1 (8 oz) can tomato sauce
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp chili powder
- 1 Tbsp lime juice
Instructions
Instant Pot Instructions:
- Add all ingredients except lime juice into Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir in the lime juice. Taste test and add salt to taste, if needed.
- Ladle into bowls and serve topped with Fritos and a dollop of sour cream.
Slow Cooker Instructions:
- Add all ingredients except lime juice into slow cooker.
- Cover and cook on low for 3-4 hours.
- Stir in the lime juice. Taste test and add salt to taste, if needed.
- Ladle into bowls and serve topped with Fritos and a dollop of sour cream.
Notes
If you’re not using seasoned pork you may want to add in a can of green chiles and season the meat a little before adding it into the pot.
