Description

An easy dump and go Instant Pot or slow cooker recipe with tender bites of pork, black eyed peas, corn, tomatoes and finished off with lime juice. 


Ingredients

Scale
  • 22 ounces pork stew meat (I used a package of Willamette Valley hatch green chile seasoned pork stew meat)
  • 3 cups chicken broth
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black eyed peas, rinsed and drained
  • 1/3 cup converted rice
  • 1 (14.5 ounces) can petite diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 Tbsp lime juice

Instructions

Instant Pot Instructions:

  1. Add all ingredients except lime juice into Instant Pot. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  3. Stir in the lime juice. Taste test and add salt to taste, if needed.
  4. Ladle into bowls and serve topped with Fritos and a dollop of sour cream. 

Slow Cooker Instructions:

  1. Add all ingredients except lime juice into slow cooker. 
  2. Cover and cook on low for 3-4 hours.
  3. Stir in the lime juice. Taste test and add salt to taste, if needed.
  4. Ladle into bowls and serve topped with Fritos and a dollop of sour cream. 

Notes

If you’re not using seasoned pork you may want to add in a can of green chiles and season the meat a little before adding it into the pot.
