Description

An easy soup with hamburger, smoked sausage, corn, beans, potatoes and more! This soup has lots of flavor and will fill up your little cowgirls and cowboys! 


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 2 cups chicken broth
  • 1 (14 oz) package smoked sausage, sliced into quarter inch rounds
  • 2 medium Russet potatoes, cut into cubes
  • 1 (14. 5 oz) can diced tomatoes, with liquid
  • 1 (14.5 oz) can pinto beans, with liquid
  • 1 cup frozen corn
  • 1 (4 oz) can diced green chilies
  • 1 (14.5 oz) can green beans, drained
  • 1 Tbsp chili powder
  • 1 Tbsp cumin

Instructions

Instant Pot Instructions: 

  1. Turn Instant Pot to saute setting. When displays says HOT add in the beef and break it up. Add in the onions. Saute for about 5 minutes. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  2. Layer in the following ingredients without stirring: sausage, potatoes, tomatoes, pinto beans, corn, green chilies, green beans, chili powder and cumin. 
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let the pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  4. Stir well. Taste test and adjust seasoning as needed. Ladle into bowls and serve. 

Slow Cooker Instructions: 

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Saute for about 5 minutes. Add to the slow cooker. 
  2. Add in the broth, sausage, potatoes, tomatoes, pinto beans, corn, green chilies, green beans, chili powder and cumin. Stir.
  3. Cover and cook on low for 6-8 hours. 
  4. Stir well. Taste test and adjust seasoning as needed. Ladle into bowls and serve.
