Description
An easy soup with hamburger, smoked sausage, corn, beans, potatoes and more! This soup has lots of flavor and will fill up your little cowgirls and cowboys!
Ingredients

- 1 pound lean ground beef
- 1 cup diced onion
- 2 cups chicken broth
- 1 (14 oz) package smoked sausage, sliced into quarter inch rounds
- 2 medium Russet potatoes, cut into cubes
- 1 (14. 5 oz) can diced tomatoes, with liquid
- 1 (14.5 oz) can pinto beans, with liquid
- 1 cup frozen corn
- 1 (4 oz) can diced green chilies
- 1 (14.5 oz) can green beans, drained
- 1 Tbsp chili powder
- 1 Tbsp cumin
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When displays says HOT add in the beef and break it up. Add in the onions. Saute for about 5 minutes. Pour in the broth and scrape bottom of pot so that nothing is sticking.
- Layer in the following ingredients without stirring: sausage, potatoes, tomatoes, pinto beans, corn, green chilies, green beans, chili powder and cumin.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let the pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir well. Taste test and adjust seasoning as needed. Ladle into bowls and serve.
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Saute for about 5 minutes. Add to the slow cooker.
- Add in the broth, sausage, potatoes, tomatoes, pinto beans, corn, green chilies, green beans, chili powder and cumin. Stir.
- Cover and cook on low for 6-8 hours.
- Stir well. Taste test and adjust seasoning as needed. Ladle into bowls and serve.
