Instant Pot Fried Rice

Are you more of a lo mein or fried rice type of person? I like both for sure! It’s always a hard choice to make when getting Chinese takeout. Now you can make your own fried rice at home with just a handful of ingredients and a few minutes of time.

Fried rice comes together very quickly and is mostly hands off thanks to the Instant Pot. Choose whatever kind of rice you like best and cook according to the directions in the green chart. Once your rice is cooked stir in some scrambled egg, soy sauce, peas and carrots and sesame oil. Voila! Fried rice. So yummy and so easy.

I’ve made a free printable rice cooking times cheat sheet for you! I hope you find it handy. I keep mine in the kitchen so that I can easily find the water to rice ratio and how many minutes I’m supposed to cook the rice for. You can easily print this cheat sheet by clicking here.

For a variation on fried rice try adding in chunks of ham for ham fried rice or chunks of cooked chicken for chicken fried rice. There are lots of ways to get creative. You can also use a variety of frozen vegetables, like stir fry veggies, green beans or broccoli. Make this recipe your own.

Description

Easy recipe for fried rice made quickly in your Instant Pot. Just like what you’d order at Panda Express!


Ingredients

Scale
  • 2 cups uncooked long grain white rice
  • 3 cups water
  • 3 Tbsp canola or vegetable oil
  • 2 eggs, beaten
  • 1/4 cup low sodium soy sauce
  • 1 tsp sesame oil
  • 1–2 cups frozen peas and carrot mix

Instructions

  1. Add water and rice to the Instant Pot. Cover the pot and secure the lid. Make sure valve is sealed. Set the manual/pressure cook button to 5 minutes. When time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid. Scoop rice into a bowl. 
  2. Turn Instant Pot to the saute setting. When the display says HOT add in the oil and swirl it around. Add in the eggs and scramble them, breaking them into very small pieces.
  3. Add in the white rice, soy sauce and sesame oil. Toss until rice is full coated. Add in the frozen peas and carrots and toss until they are heated through (about 1-2 minutes). Turn off Instant Pot. 
  4. Serve and enjoy!

Notes

For the best results use cold rice instead of hot. I’ve done both ways and confirm that both are good! Hot rice gets a little mushier but it’s still tasty. 

To make gluten free use Tamari instead of soy sauce. 

To make with brown rice use 2 cups brown rice and 2.50 cups of water and pressure cook for 22 minutes with a 10 minute NPR. 

To make with jasmine rice use 2 cups rice and 2 cups water and pressure cook for 4 minutes with a 10 minute NPR. 

I used my 6 quart Instant Pot Duo 60 7 in 1*.

    Hi Karen, love your recipes btw. I haven’t made this yet but I have a question, isn’t the water to long grain white rice ratio 1-1 in an Instant Pot? I have seen some recipes call for a 1/4 more per cup of rice but not a 1/2 cup. Thanks in advance. Again love your recipes. Ciao.

      I’ve seen anywhere from 1 to 1.5 cups per 1 cup of rice. So I guess it’s probably a personal preference.

    Is it possible to use less rice for the recipe, like just 1 cup? Would I need to adjust the measurements for the other ingredients if I used less rice? I live alone and 1 cup of rice is already a lot for me.

      Yes, I would cut in half all the ingredients and keep the same cooking time.

    I made this yesterday and loved it!
    Someone else asked about adding chicken and you prefered pre-cooked, seasoned, bite size chicken.
    I was wondering if , to save steps, I could put raw chicken tenderloins in with the rice that they would both get done together and then cut up the chicken when the rice is removed?
    If so, would i lay the tenderloins on top of the rice and then season them? and do I need any extra water?

      Yes do this! Great plan. I would lay them on top and maybe salt and pepper them a little. No extra water needed.

      You could just use canola oil, won’t have that iconic taste but will still work okay.

    Made for lunch today, used jasmine rice cooked according to chart but with beef bullion for extra flavor, perfect! Used fresh carrots just sauted them in about 1/2 cup water while the pot was heating up before you add the egg, worked great. I also added steak cut into bite size pieces and pressure cooked for 5 min and instant pressure release. I will definitely be making again. One question though, the recipe called for 3 cups water I only used 2 that I cooked the rice in???

      yes that’s right since jasmine rice uses a 1:1 ratio as opposed to white rice which uses 1:1.5 ratio.

      Yes I haven’t tried that but I bet it would work. you can pressure cook them and they’ll be super soft or cook another way and add in after pressure cooking cycle is over.

    If you do not want to add the eggs and vegetables, can you add the sesame oil and the soy sauce to the water so it will all cook together at the same time? I hope that made sense?

      You can use the same measurements. Here are guidelines for the mini: For the 3 quart mini Instant Pot:

      Half full = 6 cups
      2/3 full = 8 cups
      Max 2 cups of dried beans + 4 cups liquid
      Max 2 cups of dry rice + 3 cups liquid
      Max 3.5 pounds of meat + 1 cup liquid
      Max 7 cups vegetables + 1 cup liquid

      If you don’t like it sticky then rinse your rice really well. As for flavor I add a little bit more soy sauce or salt to my desired taste.

    Hi Karen
    Love your rice cooking time chart. Could you please include water and rice measurements, and cooking times, and npr times for short grain brown rice, brown jasmine rice, and brown basmati rice?

    Do you rinse the rice before cooking?

    Also, would the water ratio and cooking times change if I doubled or halved the amount of rice we start with?

      Hi there, I will have to add those to the chart. I don’t rinse the rice before cooking.
      Water to rice ratios need to stay the same when you double or halve a recipe. so if 1 cup rice and 1 cup water to halve it it would be 1/2 cup water and 1/2 cup rice and to double 2 cups water and 2 cups rice. The same cooking times apply if doubling or halving the recipe.

    Question: would you add the chicken at the end in the IP? Do you preheat it and the add it? Should it be thinly sliced or more like bite size chunks?

      Hi Karin, I would prefer bite size chunks of chicken that has been pre-cooked and seasoned a bit with salt and pepper. I would add it in when I add in the peas and carrots.
