I’m Obsessed Casserole–seasoned ground beef, tender potatoes, and classic burger toppings like cheese, pickles and bacon are combined in the Instant Pot for a one-pot meal with all the flavors of a loaded cheeseburger.

I’m Obsessed Casserole

I’m OBSESSED with this Instant Pot cheeseburger potato casserole recipe! This cheesy dinner is simply amazing! The boys loved it! It’s pretty simple so you probably already have most of the ingredients already at home. Enjoy!

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7
  • Onion
  • Montreal steak seasoning–or another type of steak seasoning
  • Beef broth–or water and Better than Bouillon beef base
  • Russet potatoes–or red, yukon gold
  • Ketchup–Heinz brand
  • Mustard–yellow
  • Salt and pepper
  • Mayonnaise
  • Cheddar cheese
  • Dill pickles
  • Tomatoes
  • Bacon crumbles

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the steak seasoning.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Evenly add in the potatoes. Dump in the ketchup and mustard and sprinkle the potatoes with a pinch of salt and pepper.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Gently stir in the mayo, cheese, pickles, tomatoes and bacon. 

Serve and enjoy!

Notes/Tips

  • Serve with a green salad.
  • This recipe is gluten-free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 tsp Montreal steak seasoning
  • 3/4 cup beef broth
  • 1 pound Russet potatoes, peeled and cut into 1/2 inch cubes
  • 3 Tbsp ketchup
  • 1 Tbsp mustard
  • Pinch of salt and pepper
  • 1 Tbsp mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced pickles
  • 1/2 cup diced fresh tomatoes
  • 1/2 cup bacon crumbles

Instructions

    can this be made in a slow cooker I do not have an instant pot thank you in advance

      Yes but I would pan fry and drain the beef while you also brown the onions first before adding it into the crockpot, that way you are sure it is cooked thoroughly and won’t have all the extra grease in your meal.

      sure this is how:
      Brown the beef and onion first on the stovetop (or in a skillet insert, if you have one). Drain off excess grease. Stir in the Montreal steak seasoning.

      Transfer to the slow cooker and add in: beef broth, potatoes, ketchup, mustard, and a pinch of salt and pepper. Stir to combine.

      Cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the potatoes are fork-tender.

      Stir in the finishing ingredients: mayonnaise, shredded cheddar, diced pickles, tomatoes, and bacon crumbles. Mix gently until the cheese melts a bit and everything is combined.

      Serve and enjoy!

    This is fantastic, can not believe no one has reviewed this yet. I added an extra pound of beef and poured the bacon grease (from cooking the bacon) all over the potatoes before pressure cooking. I will eat this weekly!

    I do not have an instant pot would love to know how to make all these recipes in a Crock-Pot slow cooker cannot be done if so can you please share how to do it and how long thank you in advance God bless
