Hollywood Chicken–a creamy Instant Pot chicken and noodles dish made with tender chicken, egg noodles, mushrooms, and a savory sauce. It’s slurp slurp good!

Today’s recipe is adapted from Hollywood chicken stroganoff in The Happy in a Hurry Cookbook* by Steve and Kathy Doocy. The story behind this recipe is shared in the book, “Kathy’s mom was always looking for a good deal, especially at garage sales. She knew the best garage sales in the world were just over the mountain from their Encino home, so she loaded up the car and she’d head to Beverly . . . Hills, that is. Swimmin’ pools, movie stars. Once she stumbled upon a prominent church in Beverly Hills having a bazaar. This was a good way for the rich and famous to offload things they didn’t want anymore instead of posting a garage sale sign in front of their mansions. “Look at this,” she said as she pulled a white mink stole from a bag, bragging to Kathy when she returned home. “It was Liz Taylor’s!” And with that jaw-dropper, she opened it up to show the label, and there was Liz monogrammed inside. Kathy knew it could have been any Liz, but her mother insisted it was Liz Taylor’s to justify whatever it cost—which was way too much, according to Kathy’s dad, who inspected it later that night. She bought one other item of note. At that time in Hollywood one of the biggest movie stars in the world was Vincent Price, and when he wasn’t scaring the living daylights out of people in his movies, he and his wife, Mary, wrote bestselling cookbooks. At that bazaar was an autographed first edition Vincent Price cookbook, which Kathy’s mom bought and promptly presented to Kathy, who was in high school and just learning to cook. The recipes were way past Kathy’s home ec skill level, but whoever owned it before had taped into the book scads of recipes clipped from newspapers, and Kathy found a beef stroganoff recipe that she’s made for years. This chicken version of that recipe reminds Kathy of her childhood near Hollywood, where you never knew when you’d run into a movie star at the Rexall drugstore (where she met John Wayne), the car wash, or the church bazaar, where Liz Taylor might have donated her mink stole. Curious about what she paid for that autographed first edition cookbook? One dollar. Not bad, Price-wise.” This was a savory and comforting dish that we loved. Usually I use sour cream in stroganoff but the cream cheese was a fun twist. Enjoy!

Ingredients/Substitution Ideas

  • Olive oil–or butter
  • Onion
  • Mushrooms
  • Low sodium chicken broth
  • Onion soup mix–I used Lipton’s
  • Old fashioned wide egg noodles–I used Mrs. Miller’s brand
  • Chicken tenderloins–or raw chicken breasts/thighs cut into bite size pieces
  • Black pepper
  • Cream of chicken with herbs condensed soup–I used Campbell’s
  • Cream cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onion and mushrooms. Saute for 4 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the onion soup mix and the egg noodles. Lay the chicken evenly over the noodles. Sprinkle the chicken with the pepper. Scoop the cream of chicken soup over the top of the chicken. Dump the cream cheese on top. Don’t stir. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. 

Remove the chicken and cut it into bite size pieces. Stir it into the pot. 

Serve and enjoy!

Notes/Tips

  • Serve with steamed or roasted green beans or asparagus.
  • Try adding in some frozen peas at the end.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. You can make this in the 3 quart pot if you cut the recipe in half.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 2 Tbsp olive oil
  • 1 cup diced onion
  • 8 ounces sliced mushrooms
  • 4 cups low sodium chicken broth
  • 1 (1 ounce) packet onion soup mix
  • 12 ounces old fashioned wide egg noodles (I used Mrs. Miller’s brand)
  • 2 pounds chicken tenderloins (or raw chicken cut into bite size pieces)
  • 2 tsp black pepper
  • 1 (10.5 oz) can cream of chicken with herbs condensed soup
  • 4 ounces cream cheese

Instructions
