Description

A one-pot meal featuring smoked sausage, tender chicken, red potatoes, and bell peppers, perfectly seasoned and cooked in the Instant Pot or slow cooker for an easy, comforting dinner.


Ingredients

  • 1 Tbsp olive oil
  • 1 (12 oz) package beef smoked sausage, sliced into quarter inch rounds
  • 1/2 cup beef or chicken broth
  • 20 oz boneless skinless chicken thighs, cut into 1 inch pieces
  • 24 oz red potatoes, cut into 1/2 inch cubes
  • 1 medium red bell pepper, sliced into 1 inch strips
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 tsp italian seasoning
  • 1/2 tsp paprika

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the smoked sausage and brown for about 2-3 minutes on each side. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Add in the chicken thighs, red potatoes and bell peppers. Sprinkle the salt, pepper garlic powder, italian seasoning and paprika into the pot. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Stir and serve. 

Slow Cooker Instructions:

  1. Add all ingredients into slow cooker and stir.
  2. Cover and cook on low for 3-4 hours or until potatoes are tender.
  3. Stir and serve.
