Description
A one-pot meal featuring smoked sausage, tender chicken, red potatoes, and bell peppers, perfectly seasoned and cooked in the Instant Pot or slow cooker for an easy, comforting dinner.

- 1 Tbsp olive oil
- 1 (12 oz) package beef smoked sausage, sliced into quarter inch rounds
- 1/2 cup beef or chicken broth
- 20 oz boneless skinless chicken thighs, cut into 1 inch pieces
- 24 oz red potatoes, cut into 1/2 inch cubes
- 1 medium red bell pepper, sliced into 1 inch strips
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 2 tsp italian seasoning
- 1/2 tsp paprika
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the smoked sausage and brown for about 2-3 minutes on each side.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the chicken thighs, red potatoes and bell peppers. Sprinkle the salt, pepper garlic powder, italian seasoning and paprika into the pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir and serve.
Slow Cooker Instructions:
- Add all ingredients into slow cooker and stir.
- Cover and cook on low for 3-4 hours or until potatoes are tender.
