Georgia Casserole
This dish is served at The Dillard House, a well-known Southern “family style” restaurant in the North Georgia Mountains. I adapted this recipe from one that is found in their cookbook. I paired it down so it would only serve 4 people instead of 10. And of course I made my version in the Instant Pot instead of the stove/oven. I’ve never been to The Dillard House but from what I hear it is known for its Southern hospitality and delicious, home-cooked meals. The Dillard House Cabbage Casserole stands out and has become a cherished part of their menu. Whether you serve it as a side dish or the main dish you’ll love this down-home southern cooking!
Ingredients/Substitution Ideas
- Cabbage–you can also buy pre-shredded cabbage in the produce section at your grocery store.
- Butter
- Flour
- Milk
- Pepper
- Kosher salt
- Cheddar cheese–I like using sharp
- Breadcrumbs–or panko (which I prefer for texture)
Steps
Pour 1 ½ cups of water into bottom of Instant Pot. Add cabbage into steamer basket*. Drop the basket into bottom of pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid. Move steamer basket out of the pot and discard the water.
Turn Instant Pot to saute setting. Add in the butter and let it melt. Slowly whisk in the flour.
Then slowly whisk in the milk. Stir until the mixture thickens. Stir in the salt and pepper. Turn off Instant Pot.
Stir the cabbage into the white sauce. Then sprinkle the cheese on top.
In a small bowl stir together the breadcrumbs and the melted butter. Then sprinkle the breadcrumbs over the top of the cabbage. Use an air fryer lid to bake the casserole for 10 minutes at 325 degrees.
Once crumbs are browned, serve and enjoy.
Notes/Tips
- Serve as a side dish to any dinner like fried chicken, ribs, steaks, etc.
- I used my Duo Crisp 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days. This dish is best the first day because of the browned, crispy breadcrumbs.
- Other recipes you can make with cabbage are buttered cabbage and cabbage roll casserole.

Notes
If you don’t have an air fryer lid you can layer the cabbage and white sauce in a small baking dish. Top with cheese and finally buttered breadcrumbs. Bake at 300 degrees for 15 minutes.

Thank you! This looks so easy and good. I’m guessing a cabbage shred salad will work. I’m trying to work in more vegetables and lower carb, which I can easily make this with less carbs.
