Thai Coconut Soup

Aubrey was our reporter for the game.  Aubrey, how did this contest go down?

Edible Carrots

I really like cooked carrots. I usually cook them in the pampered chef steamer for 3 minutes in the microwave with a little water. I spray them with a little spray butter and salt and really enjoy them. This recipe sounded even better than that, but after adding all the extras and having to wait 5 hours to eat them, I think I’ll stick with the steamer. They tasted good, and I would make them for entertaining but probably not for myself. I also don’t really use sugar or butter when I cook so a few of the ingredients of the recipe aren’t as appealing. Maybe next time I’ll leave those out and just use the other spices.


Thai Coconut Soup
This smelled so good while it was cooking. It tasted a little different than I was expecting. My friend and I both commented that it was good enough. I used 2 limes but they weren’t very juicy at all. Next time I would add a lot more lime to the soup. I usually love mushrooms but something about the mushrooms in this soup kind of ruined it for me. Next time I’m definitely leaving out the mushrooms and adding more lime. I ate it with chopped peanuts on top which added a nice texture.

Aubrey picked the thai soup as the winner.  We’ll see how it goes in the 2nd round since it seemed to struggle through round 1.  Thanks, Aubrey!
