Winner winner Gary’s Chicken Dinner!
Woo! Love this recipe. I was rooting for you, little buddy.
Rachel was at the sidelines of this game. How’d it go, Rachel?
This game was a total blowout, no down to the buzzer here. We had a clear winner in Uncle Gary’s Italian Chicken!
I made the porcupine meatballs exactly as the recipe stated. I used 97% extra lean ground beef. If I made it again, I would probably use ground turkey because there seemed to be a lot of extra fluid or grease from the meat. I would also use more rice next time because that was my favorite part of the dish. The meatballs didn’t hold together very well so they were hard to eat as they completely crumbled on the plate, but after they had cooled completely the meatballs stuck together better. I thought they were tasty but my family wasn’t as enthusiastic, so there were some leftovers.
Uncle Gary’s Italian Chicken produced a completely different outcome. My family LOVED this meal, the dish was completely devoured! The red sauce was hearty enough to fully coat the noodles, which we love. The chicken shredded perfectly and was not dried out at all. There was great saltiness and flavor to the sauce which came from the garlic salt and onion salt. The mozzarella cheese melted over everything providing an oozy, comforting goodness all throughout the sauce and chicken. I was totally impressed and my family has requested that this recipe make a very regular appearance in our dinner lineup. I really wanted to find a new go-to recipe and we have found one in Uncle Gary’s Chicken.
Great report. Thanks, Rachel. We’ll be seeing the chicken up against the wheatberry salad in the next round. Should be an interesting game.
