Enemy Casserole–a twist on ham tetrazzini made in the Instant Pot. An easy recipe with noodles, ham, mushrooms, celery, kale, cheddar and more.

Enemy Casserole
This is so good even your enemies will want to eat with you lol. It’s a creamy pasta dish with ham cubes, mushrooms, celery, thick egg noodles, kale and cheddar. It’s just comfort food to the max with lots of flavor. With the Instant Pot you can make this meal all in one pot with no babysitting. The thick egg noodles are a fun addition and you can find them in your grocery store next to the frozen breads. The Ream’s brand and the Grandma’s brand will both work. Enjoy!
Ingredients/Substitution Ideas
- Butter–or olive oil
- Mushrooms
- Onion
- Celery
- Kosher salt
- Black pepper
- Poultry seasoning
- Garlic cloves
- Chicken broth–or water and Better than Bouillon chicken base
- Reams frozen noodles–find by the frozen bread dough at the grocery store
- Ham cubes
- White wine vinegar–or red wine vinegar
- Cream cheese
- Kale–or spinach (add in after pressure cooking time is up)
- Cheddar–or parmesan
Steps
Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the mushrooms, onion, celery, salt, pepper and poultry seasoning. Saute for 4 minutes. Add in the garlic and saute for 30 seconds.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the frozen noodles, ham cubes, vinegar, cream cheese and kale.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Sprinkle cheddar on top and let it melt.

Serve and enjoy!

Notes/Tips
- Serve with a green salad.
- Try swapping out the frozen noodles with regular spaghetti. Break the spaghetti in half and lay it in a criss cross pattern in the pot. Use the same cooking time.
- Instead of using kale you can use a cup of frozen peas. Don’t add them in until after the pressure cooking time is up.
- This recipe was adapted from Ham Tetrazzini on The Pioneer Woman.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
