Description

Scalloped potatoes with ham, bacon and parmesan made with the help of your Instant Pot. 


Ingredients

Scale
  • 1 1/2 pounds red potatoes, thinly sliced rounds
  • 4 slices of bacon, chopped
  • 3 Tbsp bacon grease
  • 1/2 cup finely diced onions
  • 1 tsp black pepper
  • 1 tsp garlic salt
  • 2 Tbsp flour
  • 1/4 cup milk
  • 8 ounces ham cubes
  • 1/4 cup shredded parmesan cheese

Instructions

  1. Pour 1 ½ cups of water into bottom of Instant Pot. Add sliced potatoes into a steamer basket. Drop the basket into the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting. Remove the lid. Set aside the steamer basket, discard the water.
  2. Turn Instant Pot to saute setting. When display says HOT add in the bacon and cook until crispy. Use a slotted spoon to move the bacon to a paper towel lined plate. Reserve 3 Tbsp of the bacon grease in the pot. Add in the onions. Saute for 4 minutes. Stir in the pepper and garlic salt. 
  3. Sprinkle in the flour and then whisk in the milk until smooth. Heat through until bubbly and thickened. Turn off Instant Pot.
  4. Heat oven to 350° F. Stir the ham into Instant Pot. Fold in the potatoes. Scrape the mixture into a 9×9 inch square baking dish. Sprinkle with bacon and parmesan cheese. Cover with foil and bake for 20 minutes. Remove the foil, turn heat to 400° F and bake for 10 more minutes.
