Description
Scalloped potatoes with ham, bacon and parmesan made with the help of your Instant Pot.

- 1 1/2 pounds red potatoes, thinly sliced rounds
- 4 slices of bacon, chopped
- 3 Tbsp bacon grease
- 1/2 cup finely diced onions
- 1 tsp black pepper
- 1 tsp garlic salt
- 2 Tbsp flour
- 1/4 cup milk
- 8 ounces ham cubes
- 1/4 cup shredded parmesan cheese
Instructions
- Pour 1 ½ cups of water into bottom of Instant Pot. Add sliced potatoes into a steamer basket. Drop the basket into the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting. Remove the lid. Set aside the steamer basket, discard the water.
- Turn Instant Pot to saute setting. When display says HOT add in the bacon and cook until crispy. Use a slotted spoon to move the bacon to a paper towel lined plate. Reserve 3 Tbsp of the bacon grease in the pot. Add in the onions. Saute for 4 minutes. Stir in the pepper and garlic salt.
- Sprinkle in the flour and then whisk in the milk until smooth. Heat through until bubbly and thickened. Turn off Instant Pot.
- Heat oven to 350° F. Stir the ham into Instant Pot. Fold in the potatoes. Scrape the mixture into a 9×9 inch square baking dish. Sprinkle with bacon and parmesan cheese. Cover with foil and bake for 20 minutes. Remove the foil, turn heat to 400° F and bake for 10 more minutes.
