Easy Three Layer Beef Casserole–seasoned ground beef, onions, mushrooms, egg noodles and tomato sauce are pressure cooked together and then finished with sour cream for a creamy tomato beef noodle dish that’s quite addicting.

Easy Three Layer Beef Casserole

Easy Three Layer Beef Casserole

Today’s recipe is adapted from easy three layer beef casserole on Amish 365. The original recipe is cooked in the oven and the ingredients of beef, tomato soup, cooked noodles and cream of mushroom soup are layered. With the Instant Pot that method doesn’t work so the distinct layers are not a thing in my version, but the taste is super yummy and the whole dish is comfort food for your soul. I used chopped mushrooms and sour cream instead of cream of mushroom soup and tomato sauce in the place of canned tomato soup. Enjoy!

Ingredients/Substitution Ideas

  • Lean Ground Beef–or ground turkey
  • Diced Onion–fresh or frozen
  • Chopped Mushrooms–or canned mushrooms
  • Kosher Salt
  • Black Pepper
  • Garlic Powder
  • Beef Broth–or water and Better Than Bouillon beef base
  • Old Fashioned Thick Egg Noodles–I used Mrs. Miller’s brand
  • Tomato Sauce–or crushed tomatoes
  • Worcestershire Sauce
  • Sour Cream–or plain Greek yogurt

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onions and mushrooms. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper and garlic powder.

Pour in the broth and scrape bottom of the pot to make sure nothing is sticking. Turn off Instant Pot. 

Sprinkle in the noodles. Dump the tomato sauce and Worcestershire sauce evenly over noodles.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 

Stir in the sour cream. Salt and pepper to taste.

Serve and enjoy!

Notes/Tips

  • Serve with a green salad and some crusty bread.
  • Love cheese? Sprinkle some cheddar or parmesan on top of each serving.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. I halved the recipe and cooked it in my cute pink 4 quart pot*.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 16 oz lean ground beef
  • 1 cup diced onion
  • 4 oz chopped mushrooms
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 cups beef broth
  • 8 oz old fashioned thick eggs noodles (I used Mrs. Miller’s brand)
  • 2 (8 oz) cans tomato sauce
  • 1 Tbsp Worcestershire sauce
  • 2/3 cup sour cream
  • Salt and pepper, to taste
