Easy Hamburger Soup–an Instant Pot or slow cooker beef and vegetable soup that’s loaded with ground beef, tomatoes, hearty potatoes and lots of veggies for a simple, satisfying dinner.

Easy Hamburger Soup

Easy Hamburger Soup

This soup is everything I want on a chilly night. It uses simple ingredients I almost always have on hand, it’s pretty healthy but still filling, and I can throw it in the Instant Pot or slow cooker without spending forever on prep. It’s perfect with some buttered French bread on the side. The leftovers are even better the next day once all the flavors have had time to meld together!

Ingredients/Substitution Ideas

  • Lean Ground Beef–or ground turkey
  • Diced Onion–or 3 Tbsp dried onion
  • Italian Seasoning
  • Kosher Salt
  • Black Pepper
  • Garlic Powder
  • Smoked Paprika
  • Tomato Paste
  • Beef Broth–or water and Better than Bouillon beef base
  • Crushed Tomatoes
  • Tomato Sauce
  • Worcestershire Sauce
  • Sugar
  • Bay Leaf
  • Russet Potatoes–or red potatoes
  • Frozen Mixed Vegetables–mine had peas, carrots and green beans
  • Butter

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the Italian seasoning, salt, pepper, garlic powder, smoked paprika and tomato paste.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Dump in the crushed tomatoes, tomato sauce, Worcestershire, sugar, bay leaf and potatoes.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 4 minutes. When time is up move valve to venting and remove the lid.

Stir in the veggies and butter and let them warm through from the hot soup.

Ladle into bowls and serve.

Notes/Tips

  • Serve with a dinner roll, cornbread or French bread.
  • This recipe can be gluten free if you use gluten-free Worcestershire sauce.
  • I used my 6 quart Instant Pot*. You can also make this in a 4 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

An Instant Pot or slow cooker beef and vegetable soup that’s loaded with ground beef, tomatoes, hearty potatoes and lots of veggies for a simple, satisfying dinner.


Ingredients

Scale
  • 16 oz lean ground beef
  • 1/2 cup diced onion
  • 1 tsp Italian seasoning
  • 1 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1 Tbsp tomato paste
  • 4 cups beef broth
  • 1 (15 oz) can crushed tomatoes
  • 1 (8 oz) can tomato sauce
  • 2 tsp Worcestershire sauce
  • 1 tsp sugar
  • 1 bay leaf
  • 2 medium Russet potato, peeled and cubed
  • 1 (12 oz) bag frozen mixed vegetables
  • 1 Tbsp butter

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the Italian seasoning, salt, pepper, garlic powder, smoked paprika and tomato paste.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Dump in the crushed tomatoes, tomato sauce, Worcestershire, sugar, bay leaf and potatoes.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 4 minutes. When time is up move valve to venting and remove the lid. Discard the bay leaf.
  5. Stir in the veggies and butter and let them warm through from the hot soup.
  6. Salt and pepper to taste. Ladle into bowls and serve. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the Italian seasoning, salt, pepper, garlic powder, smoked paprika and tomato paste. Transfer to the slow cooker.
  2. Stir in the broth, crushed tomatoes, tomato sauce, Worcestershire, sugar, bay leaf and potatoes.
  3. Cover and cook on low for 4 hours. Discard the bay leaf.
  4. Stir in the veggies and butter and let them warm through from the hot soup.
  5. Salt and pepper to taste. Ladle into bowls and serve.
