Adirondack Soup–this hearty beef and barley soup is made in the Instant Pot or slow cooker with tender stew meat, vegetables, pearl barley, and a perfectly seasoned broth.

Adirondack Soup

Chilly dark fall and winter nights call for soup. And this is a good choice! This easy dump and go beef and barley soup can be made in your slow cooker or Instant Pot. The beef gets tender, the barley softens just right, and the broth has that savory flavor that tastes like it simmered all day. Don’t overlook a good beef and barley soup…the flavor payoff is way more than you’d expect! (Recipe adapted from Adirondack Beef & Barley Soup).

Ingredients/Substitution Ideas

  • Beef Broth–or water and Better than Bouillon beef base
  • Pearl Barley–or brown rice, farro
  • Beef Stew Meat–or a chuck roast cut into cubes
  • Onion
  • Celery
  • Carrots
  • Garlic Cloves
  • Petite Diced Tomatoes–or fire roasted tomatoes
  • Russet Potato–or red potatoes
  • Tomato Paste
  • Bay Leaf
  • Kosher Salt
  • Black Pepper
  • Dried Thyme
  • Soy Sauce–I used low sodium
  • Red Wine Vinegar

Steps

Pour broth, barley and stew meat into Instant Pot. Cover Instant Pot and secure the lid in place. Make sure valve is set to sealing. Set soup button to 15 minutes. 

Meanwhile, prepare all your other ingredients. Once time is up move valve to venting and remove the lid.

Add all other ingredients into the pot. Cover and secure lid, set valve to sealing. Set soup button to 5 minutes. When time is up let pot sit for 10-20 minutes and then move valve to venting. Remove the lid.

Ladle into bowls and serve. Season with a little garlic salt, if needed.

Notes/Tips

  • Serve with crusty bread. I like making homemade French bread.
  • If you’re a mushroom lover try adding some in.
  • To make it gluten free, use brown rice instead or barley.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

This hearty beef and barley soup is made in the Instant Pot or slow cooker with tender stew meat, vegetables, pearl barley, and a perfectly seasoned broth.


Ingredients

Scale
  • 6 cups beef broth
  • 1/2 cup pearl barley
  • 16 oz beef stew meat
  • 1/2 cup diced onion
  • 1 celery rib, sliced
  • 2 carrots, peeled and sliced
  • 3 garlic cloves, minced
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 large russet potato (about 15 oz), peeled and cubed
  • 1 Tbsp tomato paste
  • 1 bay leaf
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 Tbsp soy sauce
  • 2 Tbsp red wine vinegar

Instructions

Instant Pot Instructions:

    OMGoodness!! Was the easiest and fastest soup I’ve ever made and man, was it delicious. Hubby was doing the “helicopter thing” around the pot! 😉 I made him wait an extra 5 min., I added some yellow squash at the end & let it saute. You outdid yourself on this one, Karen. Thanks soooo much!

    Can i use ground beef instead of stew meat

      Yes. Ground beef works great in this! Just brown it first (either in the Instant Pot on sauté or on the stovetop), drain any extra grease, and then follow the recipe. It makes the soup a little quicker and still super hearty.
