Duke’s Casserole

Oh my gosh, you have to try making Duke’s Casserole for dinner this week! It’s one of those hearty, feel-good dishes that checks all the boxes for comfort food. The combination of ground beef with zesty taco seasoning, creamy sour cream, and a buttery biscuit base just comes together so perfectly. The layers of flavors are seriously amazing, from the savory meat and pickled jalapenos to the melty, cheesy top—it’s a total flavor bomb. Plus, it’s super easy to make, which is a major win for weeknight dinners. You basically just layer everything in a baking dish and let the oven do its magic. Even picky eaters tend to love it, and it makes fantastic leftovers.

Ingredients/Substitution Ideas

  • Pillsbury buttermilk biscuits
  • Lean ground beef–I used 93/7
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Cumin
  • Chili powder
  • Smoked paprika
  • Sour cream
  • Mayonnaise
  • Garlic salt
  • Fresh tomatoes–I used sliced grape tomatoes
  • Pickled tame jalapenos–look for Mezzetta brand next to the pickles
  • Sharp cheddar–or colby, monterey jack

Steps

Preheat oven to 350 degrees F. Spray a 9×13 inch baking dish with non-stick cooking spray.

Place biscuits into the pan in a single layer and press them into the pan, joining them together and covering the bottom of the pan as best as you can.

Bake for 12 minutes. The dough should be very light brown. Remove from the oven and set aside, leave the oven on.

Heat a medium pan over medium high heat. Add in the ground beef and break it up. Brown for 5 minutes, drain off excess grease. Stir in the salt, pepper, garlic powder, onion powder, cumin, chili powder and paprika. Set aside.

In a small bowl stir together the sour cream, mayo and garlic salt.

On the top of the biscuit crust, layer the ingredients as follows: ground beef, tomatoes, jalapenos, sour cream mixture and finally the cheese.

Bake for 30 minutes. Slice and serve.

Notes/Tips

  • Serve with shredded lettuce and a side of seasoned black beans.
  • Try adding in a diced onion with while you brown the ground beef. For even more veg add in some sliced bell peppers.
  • If you don’t have fresh tomatoes you can use half a can of diced tomatoes.
  • Try subbing sliced banana peppers for the jalapeno peppers.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

      a cross between a jalapeño and a bell pepper that have the flavor and texture of a jalapeño but with less heat.
