Description

A cozy soup with only 166 calories per serving. With ground turkey, mushrooms, green beans, tomatoes and more this Instant Pot or Crockpot soup fills you up and warms you up. 


Ingredients

  • 1 pound lean ground turkey
  • 1 medium yellow onion, diced
  • 3 ribs of celery, diced
  • 8 ounces sliced mushrooms
  • 2 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 tsp dried thyme leaves
  • 1/2 tsp dried rosemary leaves
  • 1/2 tsp rubbed sage
  • Pinch of crushed red pepper flakes
  • 6 cups water
  • 2 Tbsp Better than Bouillon Vegetable Base
  • 2 carrots, peeled and sliced
  • 1 (12 oz) bag frozen green beans
  • 1 (28 oz) can crushed tomatoes
  • 1 red bell pepper, cored and diced

Instructions

Instant Pot Instructions:

  1. Prepare your onion, celery and mushrooms. Turn Instant Pot to saute setting. When display says HOT add in the ground turkey and break it up. Brown for 3 minutes. Then add in the onion, celery and mushrooms. Brown for about 5 minutes. Stir in the garlic powder, salt, pepper, thyme, rosemary, sage and red pepper.
  2. Pour in the water and Better than Bouillon and scrape bottom of pot so that nothing is sticking. 
  3. While the broth is heating up on the saute setting prepare your other vegetables. Then stir in the carrots, beans, tomatoes and bell pepper. Turn off saute setting.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Ladle into bowls and serve. Top with a bit of parmesan cheese, if desired.

Slow Cooker Instructions:

  1. Prepare your onion, celery and mushrooms. Heat a pan over medium high heat. Add in the ground turkey and break it up. Brown for 3 minutes. Then add in the onion, celery and mushrooms. Brown for about 5 minutes. Stir in the garlic powder, salt, pepper, thyme, rosemary, sage and red pepper. Transfer to the slow cooker.
  2. Add in the water, Better than Bouillon, carrots, beans, tomatoes and bell pepper. 
  3. Cover and cook on LOW for 4-6 hours or HIGH for 3-4 hours.
  4. Ladle into bowls and serve. Top with a bit of parmesan cheese, if desired.
