Day 72: Pineapple Chicken and Sweet Potatoes

2/3 cup plus 3 tbsp all purpose flour, divided
1 tsp salt
1 tsp ground nutmeg
1/2 tsp ground cinnamon
1/8 tsp onion powder
1/8 tsp black pepper
6 chicken breasts
3 sweet potatoes, peeled and sliced
1 can cream of chicken soup
1/2 cup pineapple juice
1/4 pound mushrooms, sliced
2 tsp brown sugar
1/2 tsp grated orange peel
Combine 2/3 cup flour, salt, nutmeg, cinnamon, onion powder, and pepper in large bowl. Coat chicken in flour mixture. Place sweet potatoes on bottom of slow cooker. Top with chicken.
Combine soup, pineapple juice, mushrooms, remaining 3 tbsp flour, brown sugar and orange peel in medium bowl; stir well. Pour soup mixture into slow cooker. Cover and cook on Low 8-10 hours or on high 3-4 hours. Serve chicken and sauce over hot cooked rice, if desired. Makes 6 servings.
Review:
This is something I normally wouldn’t try. However, I really enjoyed it and have come to love sweet potatoes lately. My baby loved this meal too although the 3 year old passed on it. I give this meal 3 stars…I liked it but it probably won’t go in my normal rotation of meals just because half of our family won’t eat it.

    I made this last night and it turned out well. I was a little skeptical with the interesting combination of ingredients, but was pleasantly surprised. My husband really liked it and said he would like me to make it again sometime.
    I didn't have an orange to grate so I put a little bit of orange juice concentrate, and I also used crushed pineapple instead of pineapple juice.
    I thought the sweet potatoes were a little too mushy for me, but again my husband really liked them.

    Karen, I'm making this tonight. Hopefully it will be good and my family will like it. I like doing crockpot dinners when I know Scott has to be gone that night. They are just easy and I don't have to worry about starting dinner at 4:30!
