Day 71: Overnight Apple Cinnamon Oatmeal

Makes 8 servings

4 cups water
1 ½ cups apple juice (I used 2 cups and it was good)
1 cup steel-cut oats
½ cup pearl barley (regular, not quick-cooking)
1 tsp ground cinnamon
½ tsp grated fresh ginger or ¼ tsp ground ginger (I used ground)
¼ tsp salt
1 medium apple, coarsely chopped


Toppings:
1/3 cup coarsely chopped pecans, toasted
1 medium apple, chopped
Brown sugar
Honey
Milk or cream

1.  Combine water, apple juice, oats, barley, cinnamon, ginger, and salt in crock pot. (I put in one apple before cooking, but you can omit if you don’t like cooked apples).

2.  Cover and cook on low heat setting for six or seven hours.  If you can use this method…it works great. Top with whatever you want.

Review:
Yummy! My mom made this at Christmas and I ate it for a week. If you want to reheat it, add a little water and microwave. Also, the last time I made it, I used fresh apple juice from one of the orchards here in Orem – I think it makes a difference.  4 stars.

    I've made this several times this fall, it is delicious! It works well as leftovers, I can make a batch one evening and have breakfast all week. Thanks!

    My whole family thought this was good. We did top it with brown sugar to add a little more flavor, but I will make it again!
