Ingredients:
4 lb Pork Loin Roast
1 can beans (we use black or pinto)
2 cloves of garlic chopped
2 T chili powder
4oz can green chilies
1 T cumin
1 t oregano
1 t salt
Directions: Simmer all ingredients except beans in crock pot on low for 6 hours. Shred the meat, add the beans and let cook uncovered for another hour or so. (It usually doesn’t take the full 6 hours to cook) Serve on tortilla chips with cheese, green onions, tomatoes, sour cream and salsa.

I have to admit this isn’t the first time I’ve made this but it’s one of our favorites for when we have people come over because it makes a lot depending on how big of a roast you get. I also like that it’s pork instead of the usual chicken or ground beef. I made sure to add a little water to the meat before hand (about 1/2 c) or it tends to get a little dry. It turned out perfect.
