Description
An easy beef cobbler made with seasoned ground beef, mixed vegetables, a creamy sauce, cheese and Cheddar Bay biscuit topping baked until golden.

- 8 oz ground beef
- 1/2 cup diced onion
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp dried parsley
- 1/4 tsp kosher salt
- 1 (10.5 oz) can cream of chicken soup
- 1/2 cup chicken broth
- 1 1/2 cups frozen mixed vegetables
- 3/4 cup milk
- 1/2 of a 11.36 ounce package of Red Lobster Cheddar Bay Biscuit Mix
- 3/4 cup shredded Monterey jack cheese, divided
- 1 Tbsp melted butter
Instructions
- Heat oven to 400° F.
- Heat a pan over medium high heat. Add in the ground beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the pepper, garlic powder, parsley, salt, cream of chicken, chicken broth and mixed vegetables.
- Pour the mixture into a 9×9 inch baking dish.
- Sprinkle ½ cup of the cheese over the top.
- In a mixing bowl whisk half of the package of biscuit mix (save seasoning packet for later), the remaining ¼ cup of cheese and the milk together. Pour the batter over the top of the beef mixture.
- Bake for 40 minutes, until top is golden brown.
- Stir the melted butter together with the seasoning packet and brush it over the top.
- Let sit for 5 minutes and then serve.
