Description

An easy beef cobbler made with seasoned ground beef, mixed vegetables, a creamy sauce, cheese and Cheddar Bay biscuit topping baked until golden.


Ingredients

  • 8 oz ground beef
  • 1/2 cup diced onion
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp dried parsley
  • 1/4 tsp kosher salt
  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 cup chicken broth
  • 1 1/2 cups frozen mixed vegetables
  • 3/4 cup milk
  • 1/2 of a 11.36 ounce package of Red Lobster Cheddar Bay Biscuit Mix
  • 3/4 cup shredded Monterey jack cheese, divided
  • 1 Tbsp melted butter

Instructions

  1. Heat oven to 400° F.
  2. Heat a pan over medium high heat. Add in the ground beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the pepper, garlic powder, parsley, salt, cream of chicken, chicken broth and mixed vegetables. 
  3. Pour the mixture into a 9×9 inch baking dish.
  4. Sprinkle ½ cup of the cheese over the top.
  5. In a mixing bowl whisk half of the package of biscuit mix (save seasoning packet for later), the remaining ¼ cup of cheese and the milk together. Pour the batter over the top of the beef mixture.
  6. Bake for 40 minutes, until top is golden brown.
  7. Stir the melted butter together with the seasoning packet and brush it over the top. 
  8. Let sit for 5 minutes and then serve.
